Fluffy Pancakes

I now use this as a base. I only put 1/4 tsp for salt because the first batch I made tasted a little salty. But today I added sweet potato puree instead of butter. They tasted great. And then I made another batch for my baby. She loves these things. But I added the sweet potato, a banana, 1.5 cups of fresh spinach puree, oatmeal, vanilla, cinnamon and a little more flour and baking powder/soda. They actually tasted great. They are bright green and I was just trying to hide the spinach taste so she will eat some greens. I will keep tweaking them until I get them just right but this is a great recipe.

Whole Wheat Blueberry Pancakes

These are super fluffy and I just added some applesauce to it because it was real thick at first. I also added vanilla and cinnamon..which I add to all my pancakes. But it has a 3 year old seal of approval. She loves them.

Garbanzo Bean Chocolate Cake (Gluten Free!)

Okay I was very skeptical about this. But it is sooo good. My toddler loves it too. Can't wait for my husband to try it. I will next time work on tweaking it with egg whites and less sugar but it is very nice and will be great with some fresh fruit this summer.

Key Lime Pie VII

So easy and so good. This was a hit and will be made again. I used individual graham cracker pie crusts and it was a hit with some whipped cream on top. Can't wait to make it again and make it seem like I slaved away in the kitchen. =-)

Irish Cream Chocolate Cheesecake

I did the water bath like most people suggested and left it in the oven out of the water bath for 1.5 hours with the oven off after baking. Then left in cold garage (it was probably just as cold as fridge) covered overnight... No cracks and it was beautiful. I also didn't have Irish cream so I used Kahlua and boy was it good. Will be keeping this one around for a long time.

Waffles I

I also used whole wheat flour and used apple sauce instead of oil. I did put in a little cinnamon and a hint of ginger for added flavor. Plus a little extra vanilla. Toddler and Husband loved them. Will definitely make again.

Crustless Spinach Quiche

I have made this 2x already and both times turned out great. First time I added some spinach and broccoli. I sauted some frozen peppers and some fresh potato shreds. I would recommend if you use broccoli to start out with small amounts. I used fresh broccoli from my garden and to me that is all you could taste even though I had many other flavors in there. I cut back on the cheese just to make it a bit more healthy and used more egg whites than full eggs. You can tweak this to your hearts delight.

Three Berry Pie

Super easy recipe and so easy to customize. I used fresh berries and added more cornstarch as others indicated. I would add even more of the mixture to the bottom of the pie the next time so the bottom isn't so soggy. That was the only draw back but how fast every one scarfed it down I didn't hear any complaints. It was only the 2nd time to make a pie and I will be making it again and again this summer as different berries ripen. I did put a pizza pan underneath my pie pan and I am glad I did. I put a little more berries in than called for so it had some run off but was easily cleaned up from the pie pan. I am going to try a deep dish pan next time and load it up and adjust sugar/starch mixture. It is too good not to make as much as you can.

Bran Flakes Muffins with Raisins

I love this recipe just of the simplicity factor. I have made it only a few times and almost have it memorized. I also let it sit for just a bit to let the flakes soften up and I use whole wheat flour and substitute apple sauce for the shortening. I also have cut back on the sugar a little. I have added fresh blueberries, cranberries and more raisins. We like ours loaded with yummy stuff. I have added a bit more apple sauce until the consistency is right otherwise it was a bit dry. It is a great recipe for people who like to "Tweak" recipes to their likening. I did try and use paper cups and that was a disaster. Almost all of the muffin stuff to the cup. I am going to try and freeze them to see how well they hold up so I can take some camping too.

Low-Fat Pumpkin Bread

Loved this bread! Moist and delicious. I used 3 eggs instead of substitute. I also only used brown sugar because I didn't have any white on hand. I also added 1 teaspoon of pumpkin spice to kick the flavor up a notch. I put raisins in because I am not a fan of nuts and it was the best bread. Next time I am going to try and cut back on sugar and see how it turns out and try and use half whole wheat flower. I made 2 loaves and gave one away so I wouldn't eat it all. I will definitely be making this again and keep tweaking it to get it as healthy as possible.
