Pumpkin Gingerbread
AWESOME!!!! Even better in the days after baking as the flavor continues to develop. Made some changes: subbed 4 oz applesauce for 1/2 cup oil; used 1/2 brown sugar and 1/2 white sugar; subbed fresh squeezed OJ for the water; used heaping measures for all spices because I like things spicy. Made 12 reg. size muffins, 12 mini muffins and one 8 x 8 cake. I frosted the cake with cream cheese frosting. Did not take as long as stated to bake so watch the oven. Very moist with super fantastic taste! YUMMMMMMM!!!!!!

Big Soft Ginger Cookies
These were terrific as advertised! They tasted great, and stayed soft but mine did not have crinkle tops. I did use 1/2 stick butter and 1 stick margerine for the 3/4 cup margerine. Used 1 TB fresh squeezed orange juice instead of water. Also doubled all spices and that was perfect. Will make again!

Grandmother's Buttermilk Cornbread
Made a few changes: used regular milk and lemon juice for the buttermilk because I didn't have buttermilk and reduced sweetening to 1/4 cup honey and 1/4 cup white sugar. Hubby and kids LOVED it but I think it could still use a bit less sugar/honey. I served it with chili and would make it again.
