Fish Tacos

I made this sauce with all sour cream and used the "Fiery Fish Tacos" corn salsa recipe with it. I grilled the fish in a frying pan. Everyone loved it! Highly recommended.

The Best Meatballs

The Best Banana Bread

this is good but i made a few changes to share: replace 1/2 c. of sugar with brown sugar. add more banana (2 c. not 1.5 c) add 1/2 tsp. salt and 1 tsp. vanilla and 1 T. rum. these changes make this yummy bread even better!

African Peanut Soup

this soup is great as is, but I made it a second time and think these improvements are good enough to share. Decreased the liquid by half, doubled the peanut butter, added cumin, added 3 baked yams and used my soup emusifier on the yams and 1/2 of the soup. then added it all together with a lb of cooked diced chicken, and served with rice on the side (not in it) and allowed guests to portion out each.

I hesitate to write a review because I changed the recipe to make it less fat/refined sugar free. I used 1/2 cup of applesauce instead of the oil, and I used honey instead of brown sugar. I recommend making it the way its written, however, I would double the cinnamon.

Pumpkin Soup

This is a great soup but needs more garlic (I used 4 cloves, seemed about right) and also added a 1/2 tsp. of curry powder and 1/2 tsp. of cumin and a dash of cinnamon which gave it some flavor. I sauteed the garlic and onions (and added a stalk of celery because i had it) with the spices and then added the rest. This worked well. I also used 1/2 and 1/2 to reduce the fat content. yum!

Pear Sour Cream Pie

Carrot and Ginger Soup

This is a great recipe. 2 small changes that i made: As another reviewer mentioned, I took a few chunks of the ginger out of the soup before I blended it together and it still had plenty of ginger flavor. The second time I made this soup, I added 3 T. of butter to the soup before I blended it together and it took the soup from good to great.
