Classic Bran Muffins
This made 12 very big muffins! I didn't have buttermilk, so I used a carton of Chobani strawberry yogurt, then poured milk into the measuring cup over the yogurt to make 1 cup, and added 2 teaspoons of lemon juice. I let this sit for 10 minutes. My gang likes muffins sweet, so I added an extra 1/4 white sugar. Then, I presoaked the raisins in hot water so they would be plump. I also sprinkled sugar on top. The muffins were sticky when done, but the muffin liners helped keep things neat when I popped them out of the muffin tins. These are heavy muffins -- not light like cake -- but delicious!

Quick Yeast Rolls
Loved this recipe! I used half wheat flour and half white and a little extra water to proof the yeast with a pinch of sugar. Warning -- I had to SPOON the dough into the muffin cups! If you make bread a lot, you'll worry that this recipe needs more flour -- and it doesn't! Just spoon it in... it will be delicious and set up perfectly. My husband's comment on these rolls -- "If you want me to stay on my diet, don't make these anymore! :) This recipe makes a simple soup supper seem spectacular.

Black Bean Brownies
I made this without the chocolate chips to cut down on the calories. Satisfied my craving for chocolate! These are better when they have cooled, and even yummier the second day.
