Lemon Cranberry Whole Wheat Muffins

I followed this recipe exactly as written except I didn't have applesauce so I boiled some chopped up apples with a little water and mashed it to make my own. Since it was a little lumpier it actually left chunks of apple in the muffins which was great. I also added sliced almonds and it turned out great!!! Delicious and healthy!

Lentil Soup with Lemon

DELICIOUS!! I pureed everything as I wanted a thick and not chunky soup. The only thing I changed was that I added some curry powder and about a teaspoon of chipotle chili powder. That smokey taste gave the soup some really amazing flavor. Definitely a keeper recipe! I wanted to keep eating it long after I was full because the flavors were just so great!

Cuban Ropa Vieja

Well, we already had some great tender beef so I somewhat adapted this recipe. I cooked the onion and green peppers with oil and garlic (at least double what it called for), then I added the beef stock, tomato paste, and used a can of enchilada sauce instead of tomato sauce to give it more flavor and less of a tomatoey taste. Although I adapted the recipe, I still give it only 4 stars because I had to add quite a bit more seasoning to get it to taste delicious instead of just okay. It's a great base recipe! I served it more mexican style with corn tortillas and traditional toppings but it would be great with rice and beans as well!

Roasted Chicken with Risotto and Caramelized Onions

This was awesome! I used pearl rice which is a cheaper similar version of arborio and it worked great. I wound up using about 6 cups of broth. I omitted the thyme just out of preference and topped with cheese and chives instead. The caramelized onions were SOOO good with the balsamic vinegar on them. This definitely does take a lot longer than it states but it's VERY delicious.

Beer Burgers

Easy to make and super great tasting. Added an egg to keep it together and it worked perfectly on the grill. Didn't fall apart at all. Topped with smoked cheddar cheese. YUM!

Classic Spanish Sangria

YUM!!! I did make a few changes. i didn't have any oranges so I justed used some orange juice concentrate to take the place of both the juice and oranges. I added lemon, strawberries and a little canned pineapple. I also added some of the juice from the pineapple which is sweet so I only added about a 1/4 cup of sugar. I also used about a 1/2 cup triple sec instead of all rum just because it adds to the citrus flavor. A great starting recipe you can use to add whatever your preferences are. Would be good with all sorts of different fruits!!

Chicken Scampi II

Uhh YUM!!! The only changes that I made were that I dredged the chicken in flour with a little onion and garlic powder added to it first before pan frying. I also added more garlic just because we love it and threw in some red, yellow and orange peppers and onions for color. Everything else was kept exactly the same and it was WONDERFUL!! SOOO good. I cooked a whole box of spaghetti and added the cooked pasta to the dish and there was a perfect amount of sauce to coat the pasta as well. Tasted as good if not better than Olive Garden!

Vegetarian Chickpea Sandwich Filling

YUM! It almost makes you think you're eating chicken salad! I followed the recipe exactly except for adding more mayo. 1 Tbsp just didn't quite cut it for me. I used light mayo and used about 1/4 c. VERY good!

Yum! Yum! Yum! The only thing I changed was cutting up the tomatoes smaller and used about 1 1/2 tomatoes all mixed in instead of the large slices. The dressing is the perfect mix and tastes exactly like the fatoosh salad I get from the mediterranean restaurant here in town. I did think the mint was a bit overwhelming but I may have used too much. I'd cut back on that next time. Other than that . . . PERFECT! So good and so good for you!

Broccoli Beef I

I followed the recipe exactly as is except for seasoning the beef with a little salt, pepper and garlic while it was cooking to give it a little more flavor. We used top round roast thinly sliced. The portions were perfect and the sauce thickened up beautifully! Highly recommended!

Tater Tot Casserole

I gave it 4 stars as I like to jazz things up and this seemed a little too simple. I added shredded cheese to the mixture as well as some garlic and onion powder which are staples. I mixed in the hasbrowns and used left over ones to line the edge. I also added crushed triscuit crackers on top for some crunch. Yum! A great basic recipe that's easy to add things too!

No Bake Pumpkin Pie I

I would give it 4.5 starts if I could. I loved the easiness of this pie and the flavor was great! However, my family who is crazy for pumpkin pie liked it, but said they would prefer the original. For an easy and quick pie, though . . . this can't be beat!!!

Pizza Dough I

I've made this twice. Once using only whole wheat flour and one using a combo of regular and whole wheat. The mixture of the two turned out better than the entire whole wheat. I find that when I use whole wheat flour I have to add more water or it's too dry. I usually add garlic and onion powder to the mixture as well for some flavor. A super yummy crust that's super easy!!

Health Nut Blueberry Muffins

I, too, made some changes to make them even healthier. I took other reviewers advice and used skim milk w/ 1 Tbsp of lemon juice in place of buttermilk and splenda in place of the sugar. I also substituted applesauce (about 3/4 cup) for the banana and oil (just due to the fact that I am not a fan of bananas). I also made one batch with some cinnamon chips and it turned out GREAT! So good I've made them several times.

Sausage Jalapeno Poppers

I made these for the super bowl and they turned out great. Just for personal preference I left out the sausage and added some shreeded cheese, garlic and onion powder to the cream cheese mixture. My boyfriend gobbled them up and barely left any for me! Super yummy!!

Smoky Chipotle Hummus

This recipe was SOOOOOO good!! My boyfriend and I made a full batch and we'd finished it off in about 2 or 3 days (and this recipe makes a LOT of hummus). We like it spicy so we added 3 or 4 chipotle peppers instead of just one and it was perfect! We can't wait to make it again!

Baked Tortilla Chips

I thought these were great. For a fat and salt free option (as I'm on a very restrictive diet) I laid the chips in a single layer on the cookie sheet and then sprayed with fat free cooking spray, dripped with lime (the more the better for me!) and sprinkled on salt substitute and chili powder. I omitted the cumin. I baked them at 350 watching them CLOSELY. For me they only took about 10 minutes tops. I rotated after 5 minutes. They are wonderful. I can't stop eating them!

Sweet Apple Crumble

I thought this recipe was great! I didn't add the chocolate chips simply because I didn't have any on hand and I increased the amount of butter just a tad. I doubled the recipe and baked them in individual baking dishes and it turned out absolutely delicious!
