Cheesy Baked Salmon

A huge dinner party meant a larger piece of fish, and slight adjustment to the quantities of the ingredients. This was a big hit with everyone. Definitely a keeper in my recipe box.

Cajun Shrimp

I needed to triple this recipe for a large dinner party. I marinated the shrimp (tails on) and cooked them some at a time, just enough to fit the pan. Then I returned all to the pan and cooked some more. The shrimp were not tough (as you might expect) and my guests raved about them.

Christmas Breakfast Casserole

Amish Breakfast Casserole

I was expecting about 18 for Christmas brunch so I needed more than my traditional Guyanese Pepperpot and Garlic Pork, and something less spicy for the 'timid' palates. This recipe made a hit, and will now become a Tradition. I used turkey bacon and McCain's country style hash browns.

Seasoned Cornish Hens

Cornish hens have become a traditional Christmas dinner for my family. This recipe was awesome! I marinated the hens overnight. My family gathered on Boxing day, and I served the roasted hens with rice, green beans sauted with onions in peanut oil, and the drippings straight from the pan. absolutely delicious. My family literally licked their chops.
