Bacon-Wrapped Grilled Elk Backstrap

Excellent recipe. I'm very new to cooking/eating elk, and this is something I can do easily. I served it with carrot salad and rolls, and it was a great summer meal.

Hamburger Stroganoff

I didn't save any to freeze, and I subbed cream of mushroom and beef broth for the consomme. The only other thing I changed was to add a little flour at the end because it was a bit runnier than I like. Delicious! Love the lemon juice in there!

Orange Roasted Salmon

Delicious! The only thing I would change is to pour the orange juice mixture over the salmon before sprinkling with the herbs. It washed them off in some places, and I like them more even.

Citrus Broiled Alaska Salmon

If every bite had an orange round on it, it would be 5 stars. Next time maybe I'll try more small orange pieces. Without the chunk of orange, it was still good but nothing special. I broiled it on the middle rack, by the way, and it still cooked within the indicated time.

Tonkatsu / Katsu Sauce

We love this sauce! I added a little brown sugar to appease my husband, but we both agreed it didn't need it in the end. He wants me to try it as a beef or pork marinade also.

Is it just me, or does anyone else find this too salty? It barely tasted sweet to me. Not bad, but not what I expected. Next time I'll definitely leave out the 1/2 tsp of salt.

Beef and Tomato Pie

Made it for my husband and his buddy, and definitely should have doubled it because there was only a tiny piece left for me! (This is more of their review, since I've barely tasted it.) They noted that tomatoes with green chilies were the way to go - plain tomatoes would have only gotten 4 stars.

Homemade Flour Tortillas

This is the perfect tortilla recipe. I made them too small (and thus, too many), so I'll probably play around with the size next time. I ended up putting the last few into the fridge uncooked, and that did NOT work out for me. They weren't anywhere near as good after chilling for two days.
