Bacon Pancake Strips with Maple-Peanut Butter Sauce

Reviewed: Jun. 21, 2014
I'm giving this 5 stars for one reason: my kids LOVED it. They thought the pancakes and bacon together was awesome, and they loved the syrup/sauce. If I were to rate this for the adults in my family, it would be a 4-star recipe. It was good, but nothing special. I'd just as soon eat my bacon on the side. The only modifications I made were: 1) I added a little extra flour to the batter because I thought it was too runny, and 2) I cut the long bacon strips in have and made regular round pancakes around each. Thanks for the fun idea.

Sweet Figgy Pudding

Reviewed: May 17, 2013
This was a huge hit! I was nervous because I'd never eaten figgy pudding, let alone made it, but it turned out great. I didn't make any sauce to go with it, but drizzled cream over it instead. (Maybe that's weird? I don't know. We liked it.) My husband and two young kids both loved it, including the one who won't eat figs. The only part I wasn't sure about was the orange peel strips. It seemed strange to leave them in there. But again, I'd never had it before, so I don't know.

Eggnog Pudding

Reviewed: Dec. 18, 2012
Very easy and delicious. My husband is iffy about eggnog, because he always feels it's too sweet. However, this was just right for him, and the rest of the family loved it as well. (Note: I used cook n' serve pudding because I bought the wrong kind. I followed the rest of the recipe as written, but I followed the cooking directions on the pudding box.)

Breakfast Prune Spice Cake

Reviewed: Aug. 19, 2012
This is a terrific recipe. Super moist and delicious! It makes a lot. I don't have a 9" tube pan, so mine ended up in two 9" round pans, plus the extra in a bread pan. I baked all three at once for 30 minutes. Also, to stew prunes easily, try one of these methods: 1) Put them in a pan, cover with water, and simmer on low for 20-ish minutes, or until they look plump. 2) Put them in a container, cover them with water, and leave them in the fridge overnight. You can also add a touch of lemon juice to either method.

Sweet Grilled Steak Bites

Reviewed: Jul. 2, 2012
This was a good recipe as is. I felt it was better with a couple of changes. 1) It is tough, and either needs a more tender cut of meat, or a few hours in the slow cooker. 2) I wanted to accentuate the sweetness a little, so instead of dark corn syrup I used half light corn syrup and half molasses. It was just right for my family.

Carrot and Raisin Salad II

Reviewed: May 26, 2010
It was a little too moist for me. Kind of mushy. However, the flavor was wonderful. Next time I'll just add more carrots to get a texture I like better.

Bacon-Wrapped Grilled Elk Backstrap

Reviewed: May 26, 2010
Excellent recipe. I'm very new to cooking/eating elk, and this is something I can do easily. I served it with carrot salad and rolls, and it was a great summer meal.

Rempel Family Meatloaf

Love it! Next time I'll get better meat so it's not so greasy, and I might try to spice it up. However, it was great as is.

My husband can't get enough of this. Next time I might cut down on some of the butter, but we loved this recipe!

Hamburger Stroganoff

Reviewed: Dec. 21, 2009
I didn't save any to freeze, and I subbed cream of mushroom and beef broth for the consomme. The only other thing I changed was to add a little flour at the end because it was a bit runnier than I like. Delicious! Love the lemon juice in there!

Orange Roasted Salmon

Reviewed: Dec. 2, 2009
Delicious! The only thing I would change is to pour the orange juice mixture over the salmon before sprinkling with the herbs. It washed them off in some places, and I like them more even.

Citrus Broiled Alaska Salmon

Reviewed: Nov. 10, 2009
If every bite had an orange round on it, it would be 5 stars. Next time maybe I'll try more small orange pieces. Without the chunk of orange, it was still good but nothing special. I broiled it on the middle rack, by the way, and it still cooked within the indicated time.

Tonkatsu / Katsu Sauce

Reviewed: Nov. 9, 2009
We love this sauce! I added a little brown sugar to appease my husband, but we both agreed it didn't need it in the end. He wants me to try it as a beef or pork marinade also.

Fabulous. I also boiled the leftover marinade for a while and spooned a little over the rice. Only a tiny bit though, because it goes a long way!
