Pasta with Roasted Butternut Squash and Sage

I really enjoyed this recipe, but since I was lacking turkey sausage and sage...I had to make modifications. I also borrowed some from another recipe. I roasted the squash on 375 for 40 minutes, and put 1/2 an onion in the last 20 minutes. Next time I try this recipe I'll do it for 30 minutes at 350, since the squash started to fall apart when I mixed it with the other ingredients. I used 1/4 c. of half and half and next time will use more, because I like having more sauce :) I added parsley and parmesan cheese at the end! :)

Bean Salad

add feta!!! It makes all the difference. I also used a can of Ro-Tel(lime & cilantro) in place of lime juice and salsa. I eat it as a dip with blue corn chips. Yums.

Apple Crisp

After going apple picking and trying to use up all my apples..this is the apple crisp I've been the most pleased with! There were a couple differences...I used 1/2 c. almonds and 1/2 c. raisins instead of another nut. I also only had 3 apples, but kept the recipe the same, b/c I was in a sweet mood :) Thanks Claudia!

Spiced Baked Apples

While this is not the first time I've baked with apples, this is the first time I've stuffed them and baked them whole. I wish I would've read the reviews, because then I would've enjoyed it more. Next time I'll definitely use foil to help soften the apples sooner! The only things I changed about the recipe was using 3 small apples instead of 2, almonds rather than walnuts, and I didn't have an orange to zest... I ended up taking them out at 30 minutes, cutting them up, and baking them an additional 10 minutes at 375. Not a good idea because that obviously dried them out. Good to know for next time. I will attempt this again with the said changes!
