Delicious Stuffed Potato Pancakes

I made this recipe several times and my family loves it! I do take a short cut and use a box of dry potato pancake mix instead of making the pancakes from scratch. There is no need to precook the meat as it cooks along with the pancake mix. Use a non-stick pan and they will not stick. I serve this as a dinner meal topped with brown gravy and soup and vegs with it.

Easy Spicy Roasted Potatoes

Absolutely delicious! I followed the recipe but eliminated the cheese. Served these with roast beef for Sunday dinner and everyone loved it!

Baked Soy Lemon Chops

My family loved it! Marinaded the meat overnight with regular soy sauce and had no problem with a salty taste. I guess we like that. Adjusted the cooking time for the thickness of the chops I used. I will try this on an outdoor grill next time.

Cornell Chicken Marinade

I made this recipe several times and it is very good. I agree with Julie, it does flare up when cooking it. I've yet to make this recipe without my grill going up in huge flames. I even tried blotting off most of the marinade but I still have this problem. I use a gas grill, perhaps it's safer to make on a charcoal grill. I can understand why it's popular amoung firemen. :)

Philly Cheesesteak Sandwich with Garlic Mayo

My family loved this, but I did make some changes. I used skirt steak instead of round steak. I also used sliced mozzarella instead of shredded. I thought that putting the sandwiches in a 500 degree oven would make the buns too hard so I wrapped each sandwich in foil and put them in a 350 degree oven for approx. 8 minutes till the cheese was melted and they came out perfect! I did have some mayo mix left over and will make a little less of this mixture next time. It may not be the original Philly Cheesesteak, but it's still a great recipe!

BLT Salad

I made this for dinner today and my whole family loved it! I did omit the salt as suggested by a previous reviewer and that is a good idea since the bacon does add enough of a salty taste. Start the meal with a good soup followed by this salad and you have a great simple meal!

A great tasting and refreshing salad. Unless you like alot of onions, I recommend using a red onion and eliminating the yellow onion. I also left out the anchovies since we don't care for these and used iceberg lettuce in place of romaine.

Cucumbers with Sour Cream

My grandmother and mother made a recipe almost like this for years and I continue to make it. The only difference is we add sugar (approx. 1 teas. for every couple of tablespoons of vinegar). I slice the cucumbers very thin using my mandoline slicer and then add the sour cream, vinegar, sugar, s&p, and mix it all together. The addition of dill sounds great! I'll have to try it next time I make this. My husband loves this served over mashed potatos.

Beef Enchiladas II

Great recipe ! I did however take a previous reviewer's advice that the recipe was a bit bland so I added a pack of taco seasoning mix along with 1/2 a cup of water to the cooked and drained meat and simmered it a few minutes before placing the meat on the tortillas. I also used 2 cans of enchilada sauce instead of the dry mix pack. I also omitted the black olives since my family doesn't care for these, but the recipe still turned out great !

Southwest Steak Bites

My family loved this recipe. It was very simple and quick to make and a fun finger food to eat, especially for the kids. I deep fried these in my mini Daisy Deep Fryer (approx. 3 min. per batch) and they came out great. The prep time and the cooking time in the original recipe is overstated. I had these done from start to finish in less than 30 minutes, so don't let the time needed to make this recipe scare you. I didn't change the seasonings recommended, they were fine. Be sure to cut the meat into 1x1 inch pieces, no larger, because you want it to be like popcorn steak bites. Overall, this is a great recipe !

Brisket with BBQ Sauce

This came out really good! I used garlic and onion powders instead of the salt versions like other reviewers recommended to cut back on the sodium levels and doubled the sauce amount. I rubbed the marinade on it the night before, cooked it the next day and refridgerated it overnight for easier slicing(It was so tender I was afraid that if I sliced it while the meat was still too warm it would shred instead of slice). I then poured the BBQ sauce over the slices and reheated it at 350 degrees for approx. 45 min. Very tender and delicious!

Honey Mustard Beer Brats

This is one of the best brat recipes I've come across. Everyone who I served this recipe to loved it. The brats come out so tender! I cook this on low in the crockpot for approx. 7 hours instead of the 4-5 hours the recipe recommends to get them extra tender. They're great right out of the pot, no grilling is needed afterward, if it isn't convenient during inclement weather.

All Day Versatile Sauce

My whole family loved this recipe. I've been looking for the ultimate pasta sauce and so far I think this is the best. I've made it several times and just made a few additions. I add chopped fresh celery, some parsley (dried is fine) and bay leaf. If beef neckbones aren't available, pork neckbones will do fine. Keep the lid ajar if sauce seems too watery. I make this in a large batch and freeze some to have on hand for future meals.

Ground Beef Enchiladas

These were very good, my whole family enjoyed them.I used flour tortillas instead of corn and substituted sour cream for the yogurt. I also used shredded cheddar cheese, but next time will use a mexican shredded cheese blend. Whenever I make a dish like this I pour a little taco sauce in the bottom of the pan, this keeps the bottom of the tortillas from getting hard.

Juiciest Hamburgers Ever

I scaled this recipe to make 9 servings. They weren't juicey at all, had the texture of meatloaf like other reviews said. The seasonings were very good, although I added 1 teas. of McCormick Broiled Steak Seasoning like I do to all my homemade burgers. This recipe does make very large burgers and my family did like them. I'll probably make this again, but will add more evaporated milk or less bread crumbs.

Roast Sticky Chicken-Rotisserie Style

I have made many roast chicken recipes with great results, and this is one of the greatest! The seasonings were perfect, the results were tender and juicy. I also recommend basting like other reviews said, to keep the chicken moist and to help in the browning process. My whole family loved this. Definately a keeper!
