Mom's Secret Cherry JELL-O® Salad

This was easy and just enough of a difference to your standard jello with fruit that it really stood out and got rave reviews. By no means a gourmet or exotic side or dessert, but a tasty, easy, and economical salad that is definitely worth trying. Instead of whipped topping I made whipped cream (fresh whipped cream is so easy and much better flavor, texture, and richness compared to whipped topping in a tub. My personal opinion). Seved it with a ham dinner and the sweetness was perfect compliment to the salty ham.

Chili Relleno Squares

This was super easy and really tasty. I liked how nicely the taste of the green chilies came through. I did however triple the egg mixture and added salt and pepper to the mix. Depending on the size of the eggs you may be able to get by with just doubling the egg mixture. It did take a little longer than 30 minutes to cook due to the extra liquid. This would be good as an appetizer, side dish, or for breakfast. I will definitely be making it again.

Curried Chicken Tea Sandwiches

This is a true crowd pleaser; perfect for your next company potluck or holiday party. I followed the recipe exactly, except I accidently added 2 tablespoons of lime juice, instead of 2 teaspoons. It was just fine. Depending on your taste the amount of curry powder can be increased slightly. I have served it on Hawaiian sweet bread as a sandwich, but it is great on any type of bread or cracker or by itself.

I Don't Know

My husband loved this. Very quick and easy and great on a cold night. I used canned green beans instead of the mixed frozen vegetables. It was good, but I think the mixed veggies would have added more flavor and texture. I also added a small can (4oz) of diced green chiles. Next time I will add two cans of chiles. Per the other reviews, I did add an extra can of Cream of Mushroom soup. It was a little soupy for me, but would have been too dry without it. Next time I will go with one can of soup and a little milk.

Easy Peach Crisp II

Super easy and really good. A definite keeper. Great for when you need something homemade, but don't have a lot of time. Your guests will be impressed that you had time to "bake all day". I made the recipe as is, and really enjoyed it. I persoanlly like a little more peaches though. The next time I made it with an additional small can of peaches. I also increased the flour by about a 1/4 cup, decreased the sugar by a 1/4, and doubled the amount of cinnamon. It turned out great. I have also substituted the peaches with apple pie filling. Great with vanilla bean ice cream.

Lazy Bruschetta

Way too salty. Whoa! I would either significantly reduce the amount of garlic salt or use garlic powder instead (it must have been a typo in the ingredients as the dirctions call for garlic powder and not garlic salt.). Also, next time I would reduce the amount of olive oil. All that being said I would definitely try again as a quick, easy and tasty side.
