Homemade Mac and Cheese

Loved it!! I made two batches, one with crumbled bacon, and they were huge hits. Fed about 12 guys and they killed it. I took the member suggestion of using 1/2 c sour cream, 1/2 c milk and 2c ev.milk instead of 3c milk. Also added a few handfuls of shredded cheese, onion and garlic powder to the sauce. It didn't have enough cheese for us :) I seasoned the bread crumbs as well, and browned enough to fully cover the top. I didn't have any leftovers and we will be making this again! Thanks soo much for posting this!!!

Bacon-Roasted Chicken with Potatoes

My fiance called this a mans meal :) He loved it!! I used chicken breasts and drizzled with E.V. olive oil. The second time we boiled the potatoes some first, and they came out very tender. We even make a pan of just potatoes because we run out when trying to feed 5-6 people. I am always looking for interesting chicken recipes for him, and this is one he requests over and over! Thanks!!

Lime Cilantro Rice

My boyfriend is a Qdoba fanatic, and he absolutely LOVED this!The night we had our Qdoba party,the internet was knocked out, so I had to try to guess at the proportions, and I think it came out better that way! I used 1 TSP lime juice(bottled) per cup of rice, NO lime zest, the same amount of butter, and added cilantro until it looked balanced. We made chicken burritos like Qdoba and it was awesome. I think this more mild version is alittle closer to the real thing :) If anyone is trying to do homemade Qdoba, I suggest the Perdue pre-cooked chicken strips. We cut them and seared them with some salt and pepper in alittle veggie oil. Add canned pintos (w/salt & pepper ), sour cream and mozzerella cheese and you're set!!

Peanut Butter Kiss Cookies

This an easy and delicious recipe. I used the advice of another reviewer and did the equal parts white, brown and powdered sugar - instead of just white. I also rolled the cookie balls in white, red and green sugar before baking to make them festive. I used parchment paper on the cookie sheet and it's completly non-stick. They were a huge hit with the family for the holidays. They were perfect blooms and didn't fall at all!!! Thanks!!!

Yakitori Chicken

I have made this several times and my boyfriend and I love it! It's easy and delicious. I took the advice from another review, and cooked the chicken ON the broiler pan, which I covered in foil ( instead of using scewers ). Easy clean up. The last two times I made it, I used the perdue pre-cooked grilled chicken pieces ( which he loves ). That ended up being his favorite version! It works for me because it's alittle faster in the oven( 5-10 minutes max) and less messy.

Baked Cod

Quick, easy and melt in your mouth good !! I wanted to try fish main dish instead of chicken and I wasn't disappointed. I did change afew things ( used what I had around the house ). I mixed italian bread crumbs and a generic seafood seasoning as the breading. I found it easy to apply the dressing with a spatula ( lightly ). I was suprised how it melted in my mouth and that the ranch wasn't overpowering. I will be making this again, soon!!
