Tanya's Boneless Short Ribs

The people who said to put these in a slow cooker were probably right. I didn't have time to leave them all day cooking. They were a bit dried out and tough. I also had to adjust the sauce, as it was really too hot for my taste. We added some brown sugar and honey and it mellowed out the heat a bit. By slow cooking and adjusting the sauce down a notch, I'm betting this recipe would earn 5 stars.

Mushroom Meatloaf

This was REALLY good! I used turkey, and to tell you the truth I forgot I wasn't eating beef. The mushrooms add so much flavor to the recipe, and it was good till the last crumb. It made for excellent sandwiches as well.

Quinoa with Carrots and Raisins

Mmmm...This is REALLY good! I liked all the raisins, even if my husband thought it was a bit heavy-handed with them. I used parsley, instead of cilantro. My only complaint was the lack of instruction whether or not to keep it covered. I ended up, towards the end, covering it and adding a few extra minutes to the cooking time. It was my first time using this grain, and I learned the little balls become clearish with a white center and then little "tail-like" sprouts appear. It's a keeper, and I'm so glad I used this recipe as my first with this new food.

Bulgur Wheat with Dried Cranberries

This was pretty good, but we found the cranberries (and dried cherries which we added as well) to sink to the bottom of the pan. They didn't seem to want to stay together. This tastes pretty homey, and maybe best suited as a stuffing for chicken or something else.

Rosemary Roasted Turkey

We made this for Thanksgiving, and now I'm going to use this recipe again for Christmas. We were surprised at how moist it was without any need for basting!

Cuban Ropa Vieja

Basically I think this tastes pretty good, but I think it could be better. I appreciate how simple the recipe was to make, and therefore something a working family would really appreciate. I have to admit, I did not have the cilantro to add, and perhaps that may have made the difference, but I really doubt it. I added red pepper to the recipe and did use brisket rather than flank steak. I added a bay leaf as well. Perhaps my local Cuban restaurant has me spoiled? I will definitely try this again!

Awesome Sausage, Apple and Cranberry Stuffing

This was wonderful! My whole family loved it. The only problem I had was with the amount of stuffing. Next time I'd double the recipe so we have leftovers. I'd also add another apple, because it really added great flavor to the dish. I didn't stuff the turkey with it, but cooked it in a casserole dish in the oven.

Almond Cherry Biscotti

This was my first attempt at baking biscotti, & these are delicious! My second batch is baking as I type! I can't wait to give them as gifts. I did use some extra flour as I rolled the dough into quarters(I doubled the recipe ,& I baked it on parchment as recommended by others.

Flourless Chocolate Cake I

This went over really well with the whole family! This was despite the fact I'd baked it in the wrong pan and couldn't serve it cut into slices, but that wasn't an issue as we simply scooped it out of the pan without altering the taste :) In terms of the actual recipe, I used semi-sweet chocolate chips instead, as some here complained about the flavor, and it was wonderful (and a lot less expensive in terms of ingredients). My butter was already salted, so I skipped the added salt. This recipe is a keeper!

Baked Pears

I too used Bosc pears and cooked for a longer time - about 40 minutes. I chose not to add any sugar or butter. All I really did was cut them in half and core them, and then sprinkled cinnamon and ginger on them. My husband and I found them sweet enough on their own. Really healthy, and my husband says he likes them better than baked apples.

Peppermint Biscotti

Although they taste good,they burn more easily due to the candy. Next time I won't try crushing candy canes to do this. I'd use those starlight mints.

Beef Stew VI

I must say, I feel like I blew it by NOT reading others reviews first! The recipe was FAR too liquidy. More like soup. I had flour in the house, no cornstarch, and used equivalent quantity, but I can see now that even if I'd used cornstarch, it would of still needed triple the quantity. The flavor was really good. I'd never used rosemary this way either, and the flavor is the reason this didn't drop to 3 stars. I added sweet potatoes, zucchini, mushrooms, and frozen peas as well. Next time I will know better! I'm adding cornstarch to my shopping list right now.

Apple Pie

Really good recipe! I altered it a little bit, to try to save on calories. I used a whole wheat crust (first time too!) and instead of regular brown sugar the Splenda variety - of which you need 1/4 instead. My pie was done perfectly, not soggy or runny. The apples I used were granny smith. The sweetness (for my husband and I) intensity was just right.

Chef John's Turkey Burger

I can't say this recipe wasn't flavorful. The directions were very easy to follow. I guess the problem lies in my stomach - it wasn't happy with the spiciness of the burger, much to my dismay. I will have to try it again leaving out the chili paste.

Creamy Rice Pudding

My first attempt at a stovetop version (usually I bake it), and it's delicious ! The only short grain rice at the market was risotto, and I'm so glad I used it! I gave the risotto a full 22 minutes to cook. I tripled the recipe and ran short on raisins so I made a mix of raisins and dried cherries. I also tossed in the additional cup of rice as there was more cooked than i expected. taste-wise its perfect. My guests will have dessert, and I'll have leftovers for breakfast or a snack.
