Sausage Brunch Casserole

I made this for a brunch and people raved about it. It was super easy and it was gobbled up as soon as it came out. People said it tasted like a sausage and egg sandwhich from McDonalds. I have also made it with sausage links (cut up into chunks) and bacon and my kids asked for 2nd helpings. Even the two who don't like eggs ate it! Now that is sucess! Great recipe.

French Onion Soup I

Fantastic! This soup tasted like restaurant quality. Onions need much longer than 10 minutes to carmelize. Mine took at least 25 minutes. I used 2 tsp of sugar to add to the sweetness and I also used vidalia onions. You could taste the wine but it wasn't overbearing. I topped with provolone as I didn't have the swiss on hand and it was just as good. Great recipe!

Cranberry Orange Cookies

I like to make cranberry orange scones at the Holiday's (a great recipe I got from this site!) but stumbled on this recipe and decided to give it a try. I thought they were delicious and very easy to make. I didn't make the frosting but thought it was fine without. Definitely a dessert for adults and not children (the non-picky adults - husband didn't care for cranberries). My kids didn't love them.

Pineapple Carrot Bread

This recipe is a huge hit at my house. My kids love it. I have made it many times and changed the recipe to make it healthier and more moist. I use 2 C whole wheat flour and 1 C white flour. I also add about 1/2 C of yogurt (greek vanilla is what I had on hand today) with the egg mixture. I use 2 eggs and 1 egg white. I also use only 1 C of sugar and that makes it plenty sweet. Finally I use around 2 C of carrots. They kind of melt into the bread so my kids don't realize how many carrots they are really eating! Great recipe!

Apricot Barbecued Chicken

Really tasty and super easy. A quick meal for a weeknight. I added a little more apricots than the recipe called for. Next time I will also add a less BBQ sauce, as it overpowered the sauce a bit. Overall a great dish!

Reuben Dip

A definite crowd pleaser. My husband said there was too much saukerat but I thought it was just perfect. I bought corned beef from the deli and cubed it. The dip was easy and fantastic.

Seven Layer Salad

Taco Pie

This dish was a big hit at our house. My 4 year old said it was the "best dinner in the whole world!" It is super easy and a great alternative to taco's. Also a definite kid and husband pleaser. I added onion to the ground meat when cooking and used baked tortilla chips on top. The addition of chopped lettuce would be great after cooking. Overall a great recipe!

Pancakes I

I followed some of the advice of other reviewer's and added 1tsp vanilla and substituted butter for the oil. The taste of the pancakes were okay but the consistency was terrible. They were rubbery and came out very flat. I will try another recipe instead of this one next time.
