Bacon Broccoli Salad

needed to cook for a crowd so I added 3 cups cooked penne pasta. Then discovered I didn't have raisins so I used dried cranberries. Yummy!

Amy's Delicious Turkey Burgers

Yummy! Used ground turkey breast for less fat and didn't have red pepper flakes so I used a little hot sauce (about 1/8 tsp). We topped with melted laughing cow blue cheese wedges and loved them!

Crustless Spinach Quiche

Really good! I added about 1/2c Bisquik mix since we like things a little more set up and used cheddar since we always have it on hand. Made a nice easy dinner with some salad on the side. Even my 4 year old liked it!

Turkey and Quinoa Meatloaf

Made this tonight and everyone liked it very much even the 4 yr old! I followed it to the letter except I didn't have hot sauce only a really strong Sriracha sauce so I used about 7 dashes if that. Turned out great! Next time I will add more quinoa. If you are new to quinoa make sure you don't boil too long it goes dry easily!

Tuna Noodle Casserole I

We thought this was good but I had to leave out the salt due to dietary restrictions. I used a few shakes of Mrs Dash instead. I agree it needs more sauce but I just doubled the milk and it worked just fine. We don't care for canned peas so I used frozen. Lastly I crushed some herbed croutons and sprinkled on top and it was dinner. My 4 yr old gobbled it up!

Graham Cracker Ice Cream

My family raved over this! I followed the recipe but added 2 other things. When I scooped this into the freezer container I layered the crushed graham crackers along with chocolate syrup and marshmellows for a S'mores taste. It's yummy! I make again and used fat free half & half and it was just as good!

Sesame Parmesan Zucchini

This was good! I had to cook it at 400 for about 20 minutes but maybe my pieces were a bit big. I did need to use all the oil called for but I think my zucchini was larger than "medium" and I added sweet onion slices too since we love onions. I did sprinkle a little salt since my I didn't have garlic salt just garlic powder. A nice light summer dish!

Sweeper Steak

Very yummy! The only things I did differently -I cut the meat into smaller pieces and added twice the onions since we love them. I also sprinkled sesame seeds (just because I had them) over the top before baking. I served with mashed potatoes and we all loved it.

Easy Sausage Strata

I made this for New Year's Day brunch. We had a couple people with health concerns so I used about 3 oz deli ham instead of the sausage and then cut the cheese down to just enough to sprinkle over the top (about 2-3 oz). I also added a sprinkle of minced onion instead of the salt. I got rave reviews!!

Slow Cooker Mashed Potatoes

These worked out great the first time but the second time I made them they were in the slow cooker longer than I expected and they turned brown and had a burnt taste. Make sure you spray the inside of the crock with spray so they don't stick and only keep warm in there for about 2 hours.

Ruth's Roquefort Cheese Ball

Our family loves cheeseballs and this is one of the best we've tried. I used reduced fat blue cheese and reduced fat cream cheese and you can't even tell. I was out of tabasco so I used about 8 drops of chili sauce and left out the cayenne pepper. This is great with crackers but goes well with celery and other veggies too!

Red Velvet Cupcakes

I loved these! I lost the cake recipe but still had the frosting for red velvet frosting that my grandma gave me. I had to travel with them so instead of frosting the tops I poked a small hole in the top and piped the frosting inside, then covered the hole with a small dollop of frosting. They traveled beautifully then when I arrived I sifted a little powered sugar on top to accent the redness of the muffin.

Toasted Party Mix

We liked this recipe. First time was at Halloween and it was little salty for us. For Christmas I made it with butter since I was out of margarine. I was out of celery salt so left it out and used only 1 tsp garlic powder. Used the rest of ingredients exactly and it turned out great!

Frosted Corn Flake Cereal Clusters

This was really good! After the first batch was a little too rich for us I used 3 cups regular corn flakes and spread it in a square pan. Once cooled I melted chocolate some chocolate chips and poured that over the top. Once cooled I cut them into bite size pieces.
