Chinese Chicken Fried Rice II

This is a delicious, easy way to use up leftover chicken and rice. I added 2 cloves minced garlic, sliced bell pepper, and broccoli while the onion was cooking. I also increased the soy sauce to 4 TBSP (I used low sodium). It took much longer for 10 minutes to cook, but it was worth it. Next time I will try adding peas and mushrooms.

Filet Mignon with Rich Balsamic Glaze

I was hesitant to try this, but it was excellent! You must use good quality balsamic, or the sauce will taste like vinegar. Be sure to let the sauce simmer so it reduces. Next time I will try adding a little brown sugar to the sauce.

Quick and Easy Sauteed Spinach

Parmesan Garlic Bread

This is my go to garlic bread. I use all garlic powder instead of garlic salt, and I usually just stick the bread under the broiler for a couple minutes instead of baking it. I often make it with sliced Italian bread instead of French bread.

Chicken Milano

Delicious, tastes like it was more work than it was! My only complaint is I had to add flour to thicken the sauce, and it still took about 20 minutes to thicken. I made the mistake of cooking my pasta before the sauce was done, so the pasta was cold by the time the sauce was ready. I doubled the sauce, but not the tomatoes.

Delicious, but must be kept warm. I used garlic powder instead of garlic salt, but ended up adding a little salt anyway. Be sure to use good quality cheese and beer.

Peanut Butter Pie I

This was very easy to make, but the cream cheese gave it a slightly sour taste (and I used good cream cheese), which I did not care for. Be sure to beat both the peanut butter mixture and cream very well. This will ensure a fluffy, silky texture.

Crispy Rosemary Chicken and Fries

These were the best chicken thighs I've ever made. And it was so easy! I added onion powder and a little paprika. I didn't measure anything, just eye-balled it. I removed the chicken after about 45 min (they were done), and let the potatoes cook 1 hour. Next time I will let the potatoes cook for 15 minutes before adding the chicken to the pan. My chicken was not crispy, but it was still delicious.

Fire and Ice Pasta

Pretty good, but a little too spicy. Next time I will reduce the red pepper. 5 1/2 pounds of tomatoes seemed like a lot (and I love tomatoes), so I only used 1 1/2 pounds. I also decreased the oil to 3/4 cup, as others suggested, and that was perfect. Fresh basil is a must in this recipe, don't use dried.

Lucky's Quickie Chickie

Wow! This was so delicious and so simple! I seasoned the chicken with garlic powder and onion powder and increased the honey and balsamic both to 1 TBSP. I used chicken breasts and served them over rice, the rice tasted great with the sauce!
