Shrimp Etouffee II

I was very excited to try this recipe since shrimp is one of my favorite foods. I didn't do much to change this recipe. The sauce was a bit too thick for me so I added chicken broth until I got the right consistency. I added a little more hot sauce & cayenne pepper to my taste. I cooked the sauce on the stove top instead of the microwave and sauteed the shrimp separate in a skillet then added to the sauce last minute so not to overcook the shrimp. I arranged the sauce on top of angel hair pasta. This would be a good company meal and I will fix it again. Thank you

Creamy Rice Pudding

If you like rice pudding you will love this recipe. I made it a few day's ago and did not change a thing. I made it again tonight and only used half the raisins called for and added about 1 tsp. in the rice pudding while it was cooking then sprinkled some on the top after I poured it into a dish. Great recipe for left over rice. All the ingredients I had on hand.....how easy is that!!!!

Pollo Mediterranean

OMG this was wonderful! The sauce was full of flavor. I used capers instead of olives. After the sauce thickened I returned the chicken and cooked on low until the guests arrived. (Almost 45 min. longer) The chicken was even more tender. Stir often though so the sauce doesn't stick. I added this to angel hair pasta. Garlic bread and salad as sides. Thank you for such a flavorful recipe.

Basil Shrimp

I love shrimp cooked any way and this will be on the top of my list, I did not change anything in this recipe. I served this with a cheese grits souffle (found in a grits cookbook) and green beans. What a meal with many flavors going on. mmmmmmmm. Thank you for the recipe

Quick Savory Cranberry Glazed Pork Loin Roast

Oh! Yes! This is a keeper. I did not change anything with the ingredients and it turned out perfect, moist, and tender. The store only had a 2 1/2 lb. roast so I did half the recipe. Thank you.

Slow Cooker Carnitas

Without a doubt, this recipe will go into my recipe box. As good as some of the restaurants I have had pulled pork in (even better) After cooking, I pulled the pork apart with two forks. Made some white rice and substituted one of the cups of water with the juices from the roast to add flavor. Heated black beans from a can to pour over the rice, and fried bananas in a little butter. OMG! The pork fell apart. Don't change anything in this recipe. Thank You!

Pumpkin Butter

OMG! What a great recipe! I had no idea pumpkin butter was so easy to make. This was so good that I bought small canning jars, filled them with the pumpkin butter, tied a pretty bow around them and passed them out as gifts. (follow the directions for canning with the glass jars) Great on toast, English muffins, scones, bagels, etc. I did not change the recipe at all. Thank you

Rosemary Roasted Turkey

I cooked a 6 lb. turkey breast and followed the recipe cutting the ingredients in half. The smell in the kitchen was wonderful and the turkey was flavorful and yummy. Thank you for the recipe!

World's Best Scones! From Scotland to the Savoy to the U.S.

This scone recipe is a keeper. I am baking some in the oven as I rate this recipe. I have made them once before using orange flavored cranberries. This time I am using regular cranberries and 1 tbls. lemon zest. Can't wait to try them. They vanished the first time around. Very light scone almost like a biscuit. Don't need butter or jam great flavor and wonderful warm from the oven.

Italian Spinach Salad

If you haven't tried this recipe you are missing out. Fixed it tonight with salmon. Yummy! I did make a few changes. I do not like onions so they were omitted. I used turkey bacon to cut down on the calories. The warm Italian dressing (ken's Zesty Italian) poured on at the last minute with a sprinkle of Parmesan Cheese was a hit. Can't wait to make this again.

Baked Dijon Salmon

OMG!! I love Salmon and I usually grill it. This was moist and the best Salmon I have ever fixed and it was done in the oven. I did make a few changes. I used Panco Japanese Bread Crumbs. Makes for a crunchy crust and can be found in most supermarkets. I had macadamia nuts already chopped so added pecans to make the amount called for. Absolutely delicious!! Can't wait to make this again! Thank you for the recipe!

Cajun Potato Soup

I used Turkey Polska Kielbasa. Used half & half instead of heavy cream because that is what I had. Added ground cayenne pepper to give this recipe a little heat. Amazing recipe and Oh! so good. I like a thicker soup so I used a small amount of corn starch with some of the hot soup that was added back to the pot to thicken. Prepared this tonight and will have it for dinner tomorrow. Can't wait!! Thank you! A keeper!

Slow Cooker Pheasant with Mushrooms and Olives

I was so impressed with this recipe. First time cooking Pheasant. Could not find crimini mushrooms instead I found a package of assorted gourmet mushrooms to substitute. Other then this I followed the recipe as written. After cooking in the slow cooker at the required time the meat fell off the bones. This bird has many tiny bones so be careful when pulling the meat off the Pheasant. Can't wait to cook this again. Roasted potatoes with the sauce and a salad make a nice meal. Have some French bread for dipping any extra sauce.

Cheesy Chicken Meatballs

I fixed these for dinner today. Used turkey instead of chicken, chives & onion cream cheese (could not find roasted garlic) besides garlic powder is used in the recipe, one egg, olive oil instead of vegetable oil, and omitted the crushed red pepper flakes. They were perfect to form into balls. I cooked them as directed and added them into my spaghetti sauce. Moist and yummy. Can't wait to make them again and will double the recipe.

Feta and Slow-Roasted Tomato Salad with French Green Beans

This salad was yummy and I will be fixing it often. Took the easy way out and used moist sun dried tomatoes found in a package ( 2 hr cooking time is too long for me) Used baby greens instead of arugula. The dressing was perfect and can be made ahead of time Everyone loved it!! Thank you for the recipe!

Italian Sausage Soup

This soup is outstanding!! The only change was the Italian sausage. I used Oscar Mayer Smoked Turkey Sausage. This soup is easy to prepare and cooks quick. I made it today and will add this to my favorite recipe list. A bowl of this soup, salad, homemade rye bread with sweet roasted red pepper hummus Yummmmmy!

Carrot Cheesecake Muffins

Can't wait to make these again. Perfect muffins to add to the bread basket for Easter dinner. Love the cheese filling. Do put in the fridge for storing and reheat in the microwave. Great snack with a warm cup of java. Just as good the second time around. Thanks for the recipe!

Dave's Low Country Boil

I have been looking for a seafood boil recipe and found it. This is a good one and I will be making this again. The only changes were that I used Spiny lobster tails (I catch them myself, lucky me) instead of crab and throw in a bag of seafood seasoning along with the Old Bay Seasoning as recommended (cuts down on the mess and adds more flavor) The seafood bags can be found at your local market next to the Old Bay Seasoning. The reviewers suggested a lemon sliced in half, squeeze in the pot, then add the lemon to the pot. I did this also. Great recipe and easy! Thank you! :)
