Carrot Cake

I make a bunny cake every Easter ( a tradition in the family) Thought I would make a carrot cake from scratch this year and came across this recipe. This will be a keeper!! I followed the recipe and only changed the walnut ingredient to pecans ( I had a big bag in the freezer) The cake turned out moist and the frosting was perfect and easy to work with. Next time I make this cake I might add a little more spice, with this being said the cake is perfect as is with the 2 tsp of cinnamon if you like a lightly spiced cake. I like the chunky texture of the nuts, coconut, and pineapple. I am adding this to my recipe box now. Thank you Marc for the yummy recipe! By the way, this recipe makes two perfect 9 inch round cakes. I only needed one for my bunny and froze the other one, with the left over frosting. Can't wait to see how it taste after freezing.

Creamy Rice Pudding

If you like rice pudding you will love this recipe. I made it a few day's ago and did not change a thing. I made it again tonight and only used half the raisins called for and added about 1 tsp. in the rice pudding while it was cooking then sprinkled some on the top after I poured it into a dish. Great recipe for left over rice. All the ingredients I had on hand.....how easy is that!!!!

Dave's Low Country Boil

I have been looking for a seafood boil recipe and found it. This is a good one and I will be making this again. The only changes were that I used Spiny lobster tails (I catch them myself, lucky me) instead of crab and throw in a bag of seafood seasoning along with the Old Bay Seasoning as recommended (cuts down on the mess and adds more flavor) The seafood bags can be found at your local market next to the Old Bay Seasoning. The reviewers suggested a lemon sliced in half, squeeze in the pot, then add the lemon to the pot. I did this also. Great recipe and easy! Thank you! :)

Roasted Lemon Herb Chicken

I followed this recipe as written. The cooking time was off for me. My chicken was a little over 3 lbs but, even at that I cooked this chicken for 2 hrs. 10 min. and the thigh area was a little pink. I kept checking at this point until the juices ran clear and there was no sign of pink meat. After letting the chicken sit for awhile I could not believe how tender and juicy it was when I was carving. I pulled the skin up and rubbed in the seasonings along the breast before cooking. The smell in my kitchen during the cooking time was amazing. Can't wait to try this recipe again.

Orange-Scented Grilled Lobster Tails

I catch my own lobster (Florida Spiney) I found this recipes and thought I would give it a try. Always looking for something new. I followed the recippe and it was OK. My lobster shell burnt so, next time I will bring the fire to a lower setting. I will try this again and will cut and split the top of the shell and the last ten minutes have this side up ( shell side up) and add the butter sauce to the lobster meat.

Carrot Cheesecake Muffins

Can't wait to make these again. Perfect muffins to add to the bread basket for Easter dinner. Love the cheese filling. Do put in the fridge for storing and reheat in the microwave. Great snack with a warm cup of java. Just as good the second time around. Thanks for the recipe!

Roasted Brussels Sprouts

I thought the amount of salt was too much. The first time I reduced it to 1/2 and decided they needed more salt so the second time I prepared the sprouts I used 1 tsp. as recommended. I did add Balsalmic Vinegar for extra taste. I also cut the core out so they would not have a bitter taste and cut them in half. I will always prepare and eat Brussel Sprouts this way. Thank you for the recipe.

Italian Sausage Soup

This soup is outstanding!! The only change was the Italian sausage. I used Oscar Mayer Smoked Turkey Sausage. This soup is easy to prepare and cooks quick. I made it today and will add this to my favorite recipe list. A bowl of this soup, salad, homemade rye bread with sweet roasted red pepper hummus Yummmmmy!

Hasenpfeffer (Rabbit Stew)

First time I have prepared rabbit I did make a few changes but, other then that I followed the recipe to the tee. Did not have shallots so used onion, did not have chicken bouillon so used beef granuals, did not have currant jelly so used grape. Used corn starch instead of flour to thicken the gravy. Since I made changes I rated this a 4 but, should be a 5 because it turned out wonderful!! The gravy is something to die for and I put some aside to use on other recipes. Will be making this again!!

Feta and Slow-Roasted Tomato Salad with French Green Beans

This salad was yummy and I will be fixing it often. Took the easy way out and used moist sun dried tomatoes found in a package ( 2 hr cooking time is too long for me) Used baby greens instead of arugula. The dressing was perfect and can be made ahead of time Everyone loved it!! Thank you for the recipe!

Cheesy Chicken Meatballs

I fixed these for dinner today. Used turkey instead of chicken, chives & onion cream cheese (could not find roasted garlic) besides garlic powder is used in the recipe, one egg, olive oil instead of vegetable oil, and omitted the crushed red pepper flakes. They were perfect to form into balls. I cooked them as directed and added them into my spaghetti sauce. Moist and yummy. Can't wait to make them again and will double the recipe.

Slow Cooker Pheasant with Mushrooms and Olives

I was so impressed with this recipe. First time cooking Pheasant. Could not find crimini mushrooms instead I found a package of assorted gourmet mushrooms to substitute. Other then this I followed the recipe as written. After cooking in the slow cooker at the required time the meat fell off the bones. This bird has many tiny bones so be careful when pulling the meat off the Pheasant. Can't wait to cook this again. Roasted potatoes with the sauce and a salad make a nice meal. Have some French bread for dipping any extra sauce.

Chicken Scallopini

Fixed this tonight and loved it!! Could not find chicken flavored demi-glace so substituted this for chicken broth. Wonderful! Sliced green olives would be good in place of the capers. I will try this next time. My favorite Italian restaurant serves a similar dish they call Chicken picata. I served this over a small portion of spaghetti. Two large chicken breast sliced as stated and pounded is enough for four servings if you are a light eater.

Cajun Potato Soup

I used Turkey Polska Kielbasa. Used half & half instead of heavy cream because that is what I had. Added ground cayenne pepper to give this recipe a little heat. Amazing recipe and Oh! so good. I like a thicker soup so I used a small amount of corn starch with some of the hot soup that was added back to the pot to thicken. Prepared this tonight and will have it for dinner tomorrow. Can't wait!! Thank you! A keeper!

Baked Dijon Salmon

OMG!! I love Salmon and I usually grill it. This was moist and the best Salmon I have ever fixed and it was done in the oven. I did make a few changes. I used Panco Japanese Bread Crumbs. Makes for a crunchy crust and can be found in most supermarkets. I had macadamia nuts already chopped so added pecans to make the amount called for. Absolutely delicious!! Can't wait to make this again! Thank you for the recipe!

Italian Spinach Salad

If you haven't tried this recipe you are missing out. Fixed it tonight with salmon. Yummy! I did make a few changes. I do not like onions so they were omitted. I used turkey bacon to cut down on the calories. The warm Italian dressing (ken's Zesty Italian) poured on at the last minute with a sprinkle of Parmesan Cheese was a hit. Can't wait to make this again.

Tropical Sweet Potato Fries

I did not have cilantro. Other then not adding this ingredient I followed the recipe as written. The sweet potato's were not boiled long enough (should have cooked longer) Baked for 20 min. as stated and they were still not fully cooked and started to have a burnt look, turned them several times!! The seasoning mixture has a unique flavor especially with the grated lime. Too much salt though! I might try this again and boil the potato's until fork tender and cut back on some of the ingredients. Will not give up! This recipe sounds good and I love sweet potato fries.

Mini Meatloaves

I made these mini meatloaves tonight. Results: I will make them again, this time add some seasoning, a little bland for my taste. I had ground venison which is very lean and the meatloaf just melted in our mouth. I used muffin tins and they turned out to be the perfect portion. Mashed potatoes and green beans completed the meal. I would not want to alter this recipe too much, it is good as is. Thank you! Can't wait to make these again. A plate of these would be great for a pot luck.

Bachelor's Creamy Pumpkin Soup

I cooked my pumpkin from Halloween ( cut up with a little water in a baking pan covered with tin foil and baked) Scooped out the cooked pumpkin and pureed in a blender with a little chicken broth. Then I followed the recipe. Used the same spices but, did add more of each for the taste. I thought it had a bisque like flavor and texture so I added stone crab which I had the night before. Picked out the fresh crab meat from the cracked crab claw's Oh! My! was this wonderful. I put some in the freezer and hope it freezes well. Nice meal with a loaf of warm crusty buttered bread.

Moroccan Tagine

Don't know where I went wrong but, did not care for this recipe. Had left over turkey so chopped that and added this to the pan. Maybe that was the problem. I added a few more herb's that other reviewer's commented on but, still bland. Maybe I will try this again.
