Seafood Enchiladas

It could have used a little more zing - next time we are going to try all or half Monterrey jack cheese. I also used less margarine and it came out fine. Also, I used 4 fajitas and a 8x8 pan, and I thought that worked well.

Slow-cooker White Chicken Chili II

Slight adjustments: I used 1.8 lbs Chicken, 3 cloves garlic, 1/2 tbsp of ginger, no salt, 1 tbsp of cajun seasoning, and frozen corn... perfect! I think next time I might add extra beans :)

Mom's Zucchini Bread

Next time I'll substitute 1 cup brown sugar for 1 cup sugar and maybe add more zucchini. Is a little dry too, so I'd cook for less time or maybe the two initial changes will help with that...
