Mini Meatloaves

This is a great recipe! Kid friendly, easy to make ahead, easy to customize & full of flavor. I didn't have oats so I used the same amount of crushed saltines. I also added a tablespoon of dried onion (only because I was out of fresh onion) and a teaspoon of garlic powder along with a tablespoon of Emeril's seasoning. I thought that it would be too much milk but it turned out perfect - very moist.

Wonderful! I substituted cooked ham for the bacon. Next time I would omit the salt though since pork has so much to begin with.

Barley Turkey Soup

This is definitely a keeper! My whole family gobbled down seconds (and thirds)! The spice combo is perfect, though I added a bit of ground sage. I had some potatoes & red chard so I threw that it too. Perfect for customizing! The soup thickened up nicely & I am about to enjoy some leftovers right now...yum!

Peanut Butter Vegetable Chicken Soup

This was great & the whole family loved it! I added some red pepper flakes to compliment the peanut butter. It reminded me of Thai flavors. A great way to use up leftover chicken and veggies!

Mashed Potato 'n' Parsnip

New family favorite! We subscribe to a CSA for our produce and I had never used a parsnip before. It was wonderful! I doubled the recipe, omitted the sugar, used half & half instead of milk, and also added pepper, parsley and Parmesan. Yum!
