Vegan Agave Cornbread Muffins

This has become a staple recipe on our home! We all love it. The only change I made was to use unsweetened almond milk instead of soy milk. Thanks for such a fantastic vegan recipe!! Oh, and make sure to double the recipe because they won't last!

Best of Everything Veggie Burgers

These were good, but I did have trouble keeping the patty together. Since it was cold, we didn't grill them but tried to bake them in the oven. It took much longer than 20 minutes. I ended up using some of the leftover bean mixture and cooking it over the stove top like pancakes and it cooked much quicker. It also made more than 6 servings, more like 10-12 servings. The leftovers the next day were crumbly so I heated them up and ate it in large lettuce leaves. It made an awesome filling for these makeshift lettuce wraps. I thought it tasted better than the day I made them.

Tasty Lentil Tacos

I've made this twice now, and it has been a hit! Today I made the lentil/salsa mixture with veg. broth and then made them into cheeseless enchiladas topped with enchilada sauce, green onions, and olives. Baked it and then added chopped fresh tomatoes. They turned out excellent. Didn't miss the meat or cheese! This recipe is very versatile and will definitley be a staple in our home.

One Bowl Chocolate Cake III

This saved me today as my son told me last minute about having to bring a dozen cupcakes to scouts tonight. I didn't have a cake mix handy, and had all the ingredients to make this. So glad I tried this!! Perfect just the way it's written and quick to throw together too!! YUMMY and moist!

Fluffy Pancakes

This is great as is, but after the first time, I did modify for convenience and health reasons. I did half white and half wheat flour and used canola oil instead of butter. Delicious and fluffy. Have already made these several times in the last couple of weeks!

Pumpkin Bread

This was good, but not great. One out of three of my kids liked it, and hubby thought it was okay. It seemed to be missing something. I think a little salt would have improved the flavor. I think I'll stick with my own pumpkin bread recipe, my family likes it better than this one.

Pizza Dough I

I feel like I've finally found a valuable recipe for making pizza last minute!! Kudos to the creator of this one! I've always made my own dough, but used a bread maker on the dough setting. It was good, but I had to plan ahead at least a couple of hours. Tried this in a pinch for time tonight and it was a big hit!! I added a sprinkle of Italian seasoning to the dough and cooked longer and at a higher temp (375), otherwise followed the recipe. This one's a keeper!!! Thanks so much!

Too Much Chocolate Cake

This is THE cake to make!! I made a couple changes because of what I had on hand. I only used a small box of instant chocolate pudding and only 1 cup of choc chips. I decreased the oil to 2/3 cup and used lowfat sour cream. I used chocolate glaze I from this site and sprinked with heath bar bits. WOW! I took it to work and it was quickly gone with lots of compliments! This cake recipe is very versatile and tastes awesome! Will be making this for years to come!!

Chocolate Eclair Dessert

This one was so easy and quick and got rave reviews from my coworkers. I used half vanilla and half banana cream pudding because that's what I had one hand. I also used lowfat graham crackers and whipped topping, used almost a whole box of crackers and only half of the frosting. I wouldn't call it health food, but it is lighter than many desserts and is still rich in taste. Will be making this again very very soon!!

Mom's Zucchini Bread

My whole family and I loved this bread!! The first time I made it, the only change I made was using only 1/2 cup oil and 1/2 cup applesauce. It was sooo good. I recently made it again and added some chopped walnuts and raisins. Again, they were fabulous! This one's a keeper!

Microwave Caramel Popcorn

So very, very good and so very, very easy! This is definitely a diet wrecker, I can't stay out of it, and neither can my kids! Followed the recipe except, used butter instead of margarine. So, so good!!!!

Baked Potato Soup

This is a great base recipe! I made it healthier by sauteing the onions and garlic in canola oil, using fat free half and half, and topping it with turkey bacon. I also added a can of corn. So good! My 10 year old had 3 bowls!

Creamy Au Gratin Potatoes

This turned out great! I made it for an Easter gathering and it complemented the ham nicely. It was also gone quickly! I doubled it and made it in a 9 X 13 pan. I had to put a pan underneath it because it started to overflow a little as it cooked, so will probably put it into 2 separate pans next time. I used 11 medium sized potatoes for doubling it, and I also chopped my onions instead of keeping them in rings since my kids are sometimes picky about onions. This is a great side for jsut about any meal! Thanks for the recipe.

Creamy Lemon Pie

I really enjoyed this one. The lemon filling reminded me of the filling in lemon meringue pie. It was also a snap to throw together. Will definitely make this one again when my lemons are in season.

COOL 'N EASY® Strawberry Pie

Oatmeal Waffles

My family loved this recipe! I made a few changes. I used 1 cup all purpose flour and 1/2 cup wheat flour. I used rolled oats and reduced it to 3/4 cup. I also reduced the butter to 4 T. They were quick and delicious!

Minestrone Soup I

Great! I used half the butter, omited the cabbage and tomato paste, and added zucchini and spinach towards the end. I also cooked the pasta separately and added at the end. It was sooo good!!

Lentil Soup

This was great, however, it needs to be made with broth rather than water. I used diced tomatoes instead of crushed. I also used only 1 T of oil to saute the veggies and added 1 tsp of cumin. Next time I'd like to add a little curry as well. My kids all ate it and some friends loved it too!
