I'm a full time mom of 4 kiddos, ranging in age of 13 years old to 3 month old, and a part time RN. I love trying new recipes and am always tweaking them to make them healthier or fit my family's tastes. I also love running, master's swimming and any other physical activity which is good since I love eating!
My favorite things to cook
I love baking homemade bread, my kids can't wait for it to come out of the oven. I also love soups and all types of crock pot recipes!
My favorite family cooking traditions
Having a healthy sit down family dinner most evenings. I love watching my kids try new foods and find that they like something that at first they didn't want to eat. They enjoy a variety of foods that are mostly unprocessed and very nutritious. My husband too has come to enjoy eating healthy.
My cooking triumphs
I have awesome bread and roll recipes. Friends think I slave over it all day.
My cooking tragedies
When a teenager, I tried to make cornbread, but used baking soda instead of baking powder. It was terrible!!

Vegan Agave Cornbread Muffins
This has become a staple recipe on our home! We all love it. The only change I made was to use unsweetened almond milk instead of soy milk. Thanks for such a fantastic vegan recipe!! Oh, and make sure to double the recipe because they won't last!

Best of Everything Veggie Burgers
These were good, but I did have trouble keeping the patty together. Since it was cold, we didn't grill them but tried to bake them in the oven. It took much longer than 20 minutes. I ended up using some of the leftover bean mixture and cooking it over the stove top like pancakes and it cooked much quicker. It also made more than 6 servings, more like 10-12 servings. The leftovers the next day were crumbly so I heated them up and ate it in large lettuce leaves. It made an awesome filling for these makeshift lettuce wraps. I thought it tasted better than the day I made them.

One Bowl Chocolate Cake III
This saved me today as my son told me last minute about having to bring a dozen cupcakes to scouts tonight. I didn't have a cake mix handy, and had all the ingredients to make this. So glad I tried this!! Perfect just the way it's written and quick to throw together too!! YUMMY and moist!
