I'm a full time mom of 3 kiddos, with 1 on the way, and a part time RN. I love trying new recipes and am always tweaking them to make them healthier or fit my family's tastes. I also love running, master's swimming and any other physical activity which is good since I love eating!
My favorite things to cook
I love baking homemade bread, my kids can't wait for it to come out of the oven. I also love soups and all types of crock pot recipes!
My favorite family cooking traditions
Having a healthy sit down family dinner most evenings. I love watching my kids try new foods and find that they like something that at first they didn't want to eat. They enjoy a variety of foods that are mostly unprocessed and very nutritious. My husband too has come to enjoy eating healthy.
My cooking triumphs
I have awesome bread and roll recipes. Friends think I slave over it all day.
My cooking tragedies
When a teenager, I tried to make cornbread, but used baking soda instead of baking powder. It was terrible!!

Best of Everything Veggie Burgers
These were good, but I did have trouble keeping the patty together. Since it was cold, we didn't grill them but tried to bake them in the oven. It took much longer than 20 minutes. I ended up using some of the leftover bean mixture and cooking it over the stove top like pancakes and it cooked much quicker. It also made more than 6 servings, more like 10-12 servings. The leftovers the next day were crumbly so I heated them up and ate it in large lettuce leaves. It made an awesome filling for these makeshift lettuce wraps. I thought it tasted better than the day I made them.

Tasty Lentil Tacos
I've made this twice now, and it has been a hit! Today I made the lentil/salsa mixture with veg. broth and then made them into cheeseless enchiladas topped with enchilada sauce, green onions, and olives. Baked it and then added chopped fresh tomatoes. They turned out excellent. Didn't miss the meat or cheese! This recipe is very versatile and will definitley be a staple in our home.

One Bowl Chocolate Cake III
This saved me today as my son told me last minute about having to bring a dozen cupcakes to scouts tonight. I didn't have a cake mix handy, and had all the ingredients to make this. So glad I tried this!! Perfect just the way it's written and quick to throw together too!! YUMMY and moist!
