Kona Chicken

I will definitely make this again. It was so easy and really good! I gave it 4 stars vs 5 because I tweaked the recipe. I reduced the amount of soy sauce to 1/2 the amount the recipe called for. I used low sodium soy sauce. Instead of chicken breast, I used boneless skinless chicken thighs, and cooked them in the crockpot for 4 hours on low. I added: 3 cloves of garlic, grated some fresh ginger. The last hour of cooking, I added whole mushrooms. The last 10 mins, I added broccoli. Served it over steamed rice and everyone loved it. You could easily add other veggies or maybe even some pineapple too.

Appetizer Mussels

This recipe is so great! It's yummy, quick, easy, and inexpensive! It was my first time making mussels and they were perfect. My husband loves mussels so I made this as part of our Valentine's dinner and we both loved it! I couldn't find the tomato & clam cocktail juice, so I mixed regular tomato juice with clam juice. I will be making this again for sure!

Chicken Cordon Bleu II

I prepared this dish for my husband and friends and they and I were very impressed :) I made a few changes: I used twine (no toothpicks), 1/2 olive oil and 1/2 butter versus (vs. all butter), breadcrumbs (no flour), 1/2 heavy cream and 1/2 half & half (vs. all HC), after browning in skillet, I baked chicken in oven at 350 for 20 mins, and I added fresh chopped basil right before serving and it really was just icing on the cake! I served chicken over white rice and broccolli (next time I will do asparagus instead).

Fish Fillets Italiano

This is very quick, simple, and delicious! I didn't have any olives and it was still delish. I added mushrooms, a can of fire roasted tomatoes, a pinch of italian seasoning, and some diced tomatoes. Also, I used pasta instead of rice and it was perfect! I think this would go well with just about any fish or meat. Great recipe...thank you for sharing! This a keeper!

Lighter Lasagna

I made a few changes and followed some of the tips in other reviews and it turned out great! Here are a few of the changes I made: I didn't have onion on hand so I had to substitute with onion powder. Added pepper and salt. I didn't add any water, and instead of vegetable juice I chopped up 2 cups of cherry tomatoes. I also used mozarella and parmesan. This is a wonderful healthy version of lasagna!

Easy Chili I

Very easy and good, but not as spicy as I was expecting (hoping). I added corn, an extra garlic clove, kidney beans, black beans (no chili beans), and I substituted the beef for ground turkey. I feel like there was something missing but it could have just been "corn bread" :)

Eggplant Tomato Bake

This was so easy, quick, and yummy! I followed recommendations from other reviews and brushed the eggplant with olive oil, basil, garlic salt, pepper, and then sprinkle a little mozz cheese as well as parmesan cheese.

Barbie's Tuna Salad

This is now my favorite tuna recipe! The curry powder is definitely the secret ingredient and I thank you Barbie for this recipe because I never would have thought to add curry powder to tuna salad! I was out of dill weed and pickle relish so I just skipped it and I also forgot to add the onion....opps. For crunch, I added a little celery and corn. Great recipe!!

Chicken and Sweet Potato Bake

I followed the recipe and the whole dish was too dry the chicken wasn't cooked enough. I ended up adding chicken stock and cooking it a little longer to moisten the entire dish and cook the chicken all the way. It was a nice seasonal dish but I probably won't make it again anytime soon.

Whole Grain Waffles

Delicious! A few small changes that I made: used all whole wheat flour (not pastry or white), omitted the oil, left out the wheat germ (didn't have any), and added a pinch of brown sugar. My hubby and I were very surprised about how good AND healthy these turned out. The texture is great too, crisp on the outside and fluffy and moist in the inside. Thank you for a great recipe!!!

Chocolate Surprise Cupcakes

One word....WOW!! I made these for a bunch of chocolate lovers and they were huge hit! I only made one change to the recipe (used unsweetened applesauce instead of oil) and they turned out really moist, rich, and sweet. I may have used too much filling b/c they ended up looking marble all over (which looked pretty). I covered the cupcakes with a peanut butter icing but they were better without icing. The chocolate chips make these cupcakes really standout!

Key Lime Pie VII

Made this for a BBQ and everyone seemed to like it but I was disappointed. It was so heavy! I'm not a big baker so I try to follow recipes to a T. I've only had key lime pie a handful of times and it was always a much lighter pie than this. Those cute little key limes are time consuming to squeeze (even w/ a lemon squeezer). I made Graham Cracker Crust I from this website and it was easy and yummy. I will try a different recipe next time.
