Asian Pork Tenderloin

We really liked this! I cut the chili paste to 1/2 teaspoon since ours is really spicy, and I cut the pork into cubes before marinating it. I cooked it in batches in a bit of vegetable oil. Everyone in my family enjoyed it, including the super-picky eater!

Lemon-Studded Artichokes

This was an easy and delicious way to prepare artichokes, especially for someone new to cooking them. I used one lemon that I zested and 6 tablespoons of butter and a bit of fresh cracked black pepper, too. The lemon-garlic sauce was great to dip bread in as well.

Thai Curry Soup

I thought this was too spicy with 1 teaspoon of red curry paste, so next time I'll cut it back to 1/2 teaspoon. I also think that 1/2 cup of shrimp is too skimpy for 32 oz. of broth, so I put in 1/2 lb. I added a julienned carrot to the sauted items and also 1/2 tablespoon of fish oil. Overall, it was really good!

Applesauce Muffin Mix

These were tasty and I made them as described except I substituted 1/2 c. of high altitude whole wheat flour for 1/2 of the flour. I also added about 2/3 cup of chopped pecans to the tops of the muffins before adding the spinkled sugar (I used turnbinado) and baking. These did not rise very much at Denver's altitude, but I'm used to that! Next time I make them I'll try cutting the butter quantity a bit to make them slightly more figure-friendly. I'll report back if my tinkering is successful. Thanks for this yummy muffin recipe!
