Annie's Fruit Salsa and Cinnamon Chips

I really loved this recipe! Easy to make and people were raving about it at the party I carried this dish to. Recommendations I followed: -Dice the fruit small so each bite gets a good blend of all the fruit. -Cut & add the (Fuji) apples last to lessen the issue of the apples turning brown. -Replace the raspberries with frozen peaches -Do NOT add sugar to the fruit...it is PLENTY sweet without. -I used peach preserves and it came out great. -After spraying and cutting up the tortillas, I dredged them in a cinnamon/sugar mixture (1C sugar with 1 1/4t cinnamon for 2 packs of tortillas) and baked them. No need to spray again. -Dress with a dollop of Cool Whip for and *extra* special treat.

A Jerky Chicken

If I could give this recipe 4.5 stars, I would. Overall, this recipe was a great recipe for jerk chicken. My only issue with it was the pepper. My husband and I love spicy food being that we are both from tropical regions but this was a bit TOO spicy for us. I recommend reducing the pepper to HALF of a pepper and I also recommend adding a few small pieces of tropical fruit, such as pineapple, kiwi, or mango to the marinade.

Fast and Friendly Meatballs

This is a great recipe! It's simple but I use it as the base to making my meatballs. I can dress them up anyway I want from this starting point. To give it a kick, I sometime ground up a hot pepper and a few garlic cloves to add to the mix and throw in some curry powder. OR for a version that goes great with pasta, I add some sage, fresh parsley, garlic powder, onion powder and a dash of black pepper.
