Spinach Stuffed Chicken Breast

Made this tonight and it was very good but thought the chicken was a bit too dry on the outside (but tasty on inside)...DH loved it - had with carrots from this site (brown sugar, butter and dill (I used rosemary as didn't have dill)) and leftover mac and cheese :)

Chef John's Italian Meatballs

I just took these out of the oven and they were swimming in liquid!! They weren't browned or even close - the flavor of the meat is good but the consistency of the cooked meatballs is wrong - won't make again!

Buckeye Balls II

I made a batch of these last night and they are excellent (and I don't care for peanut butter!) - I, too, cut the powdered sugar to 3 c. and it was perfect - chilled them in fridge for about 45 minutes before coating - perfect! Husband has requested another batch :)

Best Chocolate Chip Cookies

I made a double batch of these the other day and everyone loved them - I baked at 350 for 10 minutes then let them sit for a couple minutes before putting on cooling rack - crispy on the outside and soft and chocolatey inside - perfect!

Oven Fried Chicken III

I haven't even tasted this yet and I'm giving it 5 stars! It's in the oven and smells great - 425 for 30 minutes skin side down and turn for additional 30 minutes - I used Panko crumbs also..

Zucchini and Potato Bake

This is in the oven right now and I have 5 minutes to go and the potatoes are about done..only change I made was to double the garlic and used panko bread crumbs- will be great with our fish! I am rating this 5 stars but for some reason my computer isn't showing the stars... :)

I made this yesterday with two 7 lb. chickens and even though they were larger than the 3 to 4 lbs. called for, they were both ready in 5 hours, give or take 10 minutes on one of them..very moist!

Just had this for dinner and it's really really great...made exactly as submitted except that I added alot of ground fresh black pepper..am thinking sauteed mushrooms would have been a nice addition...but we all loved just as is!
