Mini Sweet Potato Pies

These were delicious and so simple to make! Didn't change a single thing with the ingredients. Mine were in the oven a little longer than the recipe recommended and there was enough filling to make 48 minis. Piped whipped cream on top. Lovedlovedloved. Will definitely make them again!

Traditional Chicken Curry

This was good, but not great. Another reviewer was really on point when saying this is closer to tasting like chicken chili. The only real change I made was adding a few veggies - zucchini, bell pepper, and carrots (all added after sweating the onions). Although I enjoyed it, it certainly wasn't what I was looking for in an Indian Curry. BTW, I waited to add the yogurt until near the end - as I've seen recommended by other reviewers and in recipes - but it curdled anyhow. Will definitely use coconut milk the next time I make a curry.

Grandmother's Buttermilk Cornbread

When we had a Chili Cook-Off in my skills class at culinary school, I used this recipe to clinch the win. Well, my chili came in second place, but the cornbread was the real trophy. It was demolished by my classmates and resident chefs in mere minutes! One chef asked if I snuck in a box of Jiffy. The thing is, this recipe is better than Jiffy could ever want to be!

Pesto Turkey Burgers

I've been looking forward to trying this dish for a long time, and it certainly didn't disappoint! Sooo delicious! Only changes made were that I seasoned the meat with Toby's Salt and Pepper and added a little egg white to ensure everything stayed together. Can't wait to make these again for my BF and family!
