Ratatouille Pasta

Quick and easy as I skipped pre-salting the eggplant. Used real garlic and added 1/2 cup diced bell peppers. Very tasty over penne pasta.

Jammin' Tarheel Chili

Modified Recipe: 2 lbs ground beef, no mushrooms (mushrooms???), 2 15oz cans of Kidney Beans, 1 extra 15oz can of crushed tomatoes, and 1 tsp cayenne pepper since my family prefers a slightly less hot chili (a burden I must live by). I used Guinness beer which was perhaps too dark, but it grew on me. Served over rice. Mmmmm!!!

Lemon and Mustard Dipping Sauce for Artichokes

I had high-hopes for this one as I'm a real fan of artichokes. The flavor was weak: too lemony and not enough mustard. And I may have to agree with an earlier comment about the flavor not being quite "right" for artichokes.

Wazzu Tailgate Chili

I like medium-hot chili while my family prefers milder. So, I added a red and yellow bell pepper, took out the Habanero and fresh Jalapenos and replace those with 4 oz. of canned jalapenos. Rather than the 3 cans of chili beans, I used 1 chili beans, 1 kidney beans, and 1 black beans. Lastly, I also doubled the tomatoe sauce. This resulted in an medium-hot, hearty, chili that when served over rice was excellent and whole family enjoyed!
