Tantalizingly Tangy Meatloaf

Based on taste alone, I give this recipe five-stars. Very yummy! I followed the recipe exactly (even down to the apparently hard to find pineapple preserves- my Wal-Mart sells Smuckers brand) and I was SURE the topping would be sicky sweet and crunchy with sugar. It was not! However, based on my personal standards for meals, this is rather lacking in the healthful department, so I'd give it a 3-4 star rating. I will definitely be making it again, but adding onion, carrot, zucchini or whatever other vegetable I have that I can shred and add in. But again, that's just my opinion and has nothing to do with taste. This recipe as is has amazing flavor! My husband and I ate more than half in one meal. :)

Four Egg Yellow Cake

I made this as my first-ever from scratch cake and it turned out wonderfully! Using AP flour instead of cake flour did make it a trifle denser I guess would be the word, but that's how my husband loves it! He was eating it without the frosting! ha Great flavor and very very moist!

Austrian Chocolate Balls

Not nearly as hard to make as they taste! My husband gives it 4 stars even though he's not a huge chocolate eater- if you are a die hard, super rich chocolate fan, these are amazing and surprisingly quick and easy! The hardest part was making sure they didn't overcook since the cookie dough is so dark. Wonderful!

Ham And Cheese Frittata

Very good! My husband's friend came over and I needed something to feed two hard-working guys and had nothing in the house but the ingredients for this recipe! (Except for the green pepper.) So I whipped this up, LOVED the fact that I didn't have to turn on the oven in this over 100* heat, had never put the cottage cheese in a frittata before, loved that, and subbed fresh parsley for the pepper since I didn't have it, but could still have something green. It looked so pretty and whipped up so fast- it was great! The only downside to making it this way instead of oven was that it wasn't quite as fluffy- but still not a big deal at all. Plus- one skillet meal! Woo-hoo!

Autumn Pork Roast

This was great! I'd had a boneless shoulder roast in my freezer for a couple months because there are many times that I do not like pork as it gets SO dry and I was reluctant to make it! Anyways, I made it today and it was SO moist and delicious I couldn't believe it. The juices from the roast and applesauce and cooking out of the squash and onion really soaked into the meat and made it so moist and flavorful! I followed the recipe except that I put it in the oven before church and needed way longer than 1 hr., so I put it in at 250*F and vented the foil to prevent boil over- was gone about 4 hours. Pretty much fork-tender- amazingness. :) Served the veggies and broth over white rice. Very yummy.

Fast Creamy Tomato Penne

I made exactly as is, except when I started adding the pasta to the sauce I felt that it was too much, so I kept out some of the noodles to make the dish saucier. The dish was good, but the bell pepper didn't add much of a different flavor than if you didn't use it. However, adding 'silent' veggies is always a plus! My hubby won't eat peppers if he can pick them out, but he didn't notice them in this dish. As advertised, this is was definitely a fast, easy dish! Barely any more work than regular spaghetti in meat sauce. It is a good basic dish
