Microwave Oven Peanut Brittle

Wow!I just made this & adjusted the times because my micro is more powerful & it is already stting up nicely.The key is to be prepared-I had the hot water ready to pour into the bowl (8 cups)as soon as I had the brittle poured out & used Pam on the knife, spoon & baking pan. I can't wait to try it w/other nuts as I have almonds & pecans. part of this is a gift for my MIL,as she loves brittle. I LOVE this site!

Sour Cream Chicken Enchiladas

I needed to use up some sour cream & luckily I also had some left-over rotisserie chicken, so I decided to make this- I had a 7 oz. can of green chilies & tequila Lime Salsa,so that's what I added-I used a 4 cheese Mexican shred, but could only fit 8 flour tortillas in my pan (9x13) they were 8" tortillas. My husband absolutely loved this & I would have loved to have "seconds", but that will be tomorrow. It was well worth the effort to prepare & I'm sure I'll be making it again. I think a sprinkle of olives would be tasty & pretty too.

Extreme Banana Nut Bread 'EBNB'

Quite Yummy & hubby loved it! Didn't see the salt, so that wasn't added. Did add vanilla & cinnamon & will add more spices in the future. My 3 large bananas didn't measure to 2 cups, so filled out w/sweetened /cinnnamon applesauce. Also, used soft marg & ran out so finished that cup out w/the applesauce, too. Then was trying to get it in the oven & added choc. chips instead of chopping nuts. Also added some baking soda.Rose nicely,& was done in 55 minutes-5 minutes less might have been even better. I will definetly be using this again.Also used half white sugar, half brown sugar. Thanks for a great recipe!

Krazy Garlic Trout

Similar to what I have been doing just winging it, but liked having the oven temp&time. Fish turned out great, although I didn't use the jalepeno, we like fish on the plain side, but will add some kick when I use the leftovers in future meals.

Banana Banana Bread

Turned out awesome! After reading reviews, I did add some pure vanilla, a touch of ginger, some cinnamon, a little coconut.Stirred in some Craisins,too. Also sprinkled some br. sugar over the loaf top, Hubby & I both enjoyed this & will be sharing it w/our neighbors tonight. Great recipe!

Potato Chips

Needed a snack for a rainy Sunday afternoon,& gave this a try. So easy & sooo good! Used a slicer, Pam Spray, & a microwave/bake dish. Took 6 minutes per potatoe in my 1200 watt micro. Used salt, then garlic powder on later batches. A great snack & I will definetely be doing this again! Thanks for the great recipe.Update after sharing:Was told this is what to bring to our next get-together & they want to try different spices/seasonings. A grand-slam hit all the way around!

BBQ Chicken Sandwiches

Needed something quick for dinner & had most of the ingredients, so decided to try it-Very good & easy, used all salsa & served it over rice. Used the last of my rotiserie chicken & will definetely be doing this again-hubby really loved it, too. Thanks for a great recipe w/room to be inventive.

Fruit Cocktail Cake VI

Very similar to my "family" recipe. Quick to mix together & get in the pan. Didn't use the nuts, but added a few handsful of crushed cornflakes to the topping. Hubby loved it & we will take some to the neighbor's tonight-I know she's going to ask for the recipe!

Honey Bun Cake I

This is totally AWESOME! Got in a hurry & added the struesel to the batter, but that made the cinnamon permeate the entire batter-which is a good thing. Smelled wonderful cooking, made the glaze w/half & half & poked shallow holes in the top w/a fork. So tender when I put the knife in to cut-was the star of the evening at the neighbor's dinner~~will definetely be making this again-thanks for the recipe!

Chocolate Cherry Cake III

Love this cake! The last time I made this,I made some changes-went to a bundt pan, but the center piece was missing, so had to keep checking for doneness & adding time. Ran out of almond flavoring so used pecan flavoring. Forgot to add the chip to the batter,so pulled it out after 4 minutes & stirred them in. Despite all this it turned out great & was a hit at the party I took it to. The frosting is sweet, but made a lovely drape down the sides of the cake, texture was fine.

Taco Seasoning I

I added some extra garlic & onion powder,cause we like it that way, & even added a bit of cornstarch-didn't even make enough for a second packet-so you might want to start out w/larger quantities from the beginning. I will definetely be making this often, & in much larger quantities so I can share w/friends & neighbors. Thanks for the recipe.

Orange Cream Cake III

Used a white cake mix w/pudding in it-what I had on hand. Had regular pudding mix, so made that & let it cool,& mixed in a cup of sour cream flavored w/Watkin's Mandarin Orange Fruit Dip mix & covered the cake w/that. Everyone liked it, but want to make it w/the original recipe also as some of the people would like it even sweeter. Used a spoon handle to poke the holes & the color was very pretty. Thanks for the recipe.

Home-Style Scalloped Potatoes

I read all 100+ reviews first. I pre-boiled the potatoes, then sliced very thin. I used a large crockery square so there was just one layer of potatoes. I used heavy cream, as I needed to get that used up, & put in (dried) minced onions, some minced garlic,some parsley & added a slurry of flour & water stirring it in slowly. After pouring the sauce over the potatoes I crushed a bit of rosemary over the top, then sprinkled some Parmesan cheese, then a light dusting of smoked paprika. I baked at 375 for 1/2 an hour. Hubby & I LOVED it! I will be using this often! Thanks for the recipe, C. E.

Spicy Strawberry Salad

I followed this recipe very closely-not my usual M.O.-& it was fantastic! Very well recieved by everyone that tasted it & seconds were taken! All I added was some celery as I had a lot & I switched to almonds for the nuts. The dressing goes well w/it & really thickens afterwards also. I used an egg slicer to slice the strawberries-that made it very uniform & much easier! Thanks, Leslie-I'll be making this often.

Pineapple Cream Cheese Frosting

I made a 13 x 9 cake & knew as written it would be too much frosting, so halved it. it came out nicely, a bit thicker than a glaze, but not one that could be swirled either. Which was fine w/me. The only change I did was add a few drops of lemon extract to "brighten" the flavor. I used it on a carrot cake, to which I had added crushed pineapple. Very tasty together.

Jammin Good Bars

Made these late last night-as I was patting the dough into the pan I realized I forgot the egg! But I went ahead anyway-I used fig jam, about 14 oz. & baked for 35 minutes. hubby loved them, took some to work- they disappered quickly. Also took some to a neighbor & they got a thumbs up there also. Tomorrow, the last of them will be the Sat night dessert to our weekly wii get-together. They are crumbly so I cut them into very small bite-size pieces, to eliminate that problem & it sure makes them go further. So many variations could be made w/this-can't wait to make some more & use a different filling. Oh, & I did sprinkle confectioner's sugar over after they came out of the oven.

Soft Oatmeal Cookies

Oh Wow! These are so great! I can't wait to take them to work tomorrow-the guys are going to Love them. I bought new pans today (the baking pans from Sam's Club) & used my new silicone liners that I got @ CostCo yesterday-clean-up was so easy. I mixed them in the stand mixer-next time I will use the bigger bowl so I can add in more stuff. I used both vanilla & almond flavoring, added in raisins that I plumped in the microwave & mixed in a few chocolate chips. I wanted to add some chopped nuts, but the bowl was full. I dropped the cookies using the 2 spoon method, no chilling & they baked in about 10 minutes. Flavor & testure is great & I will freeze some so my hubby will get a few, since he is out of town right now.

I put this together quite quickly, it is now in the fridge, so hope it sets up nicely. The flavor & texture seem OK. I was going to add some salt as I used unsalted butter, but I forgot-did add vanilla extract & chopped pecans.

Soft Sugar Cookies IV

We liked this-it was simple to put together-I rolled it into balls, then flattened w/a spice jar, dipped in colored sugar. I added almond flavoring also.The last 1/2 dozen spread , but I didn't cool the pan as much as I did before, so my fault. I will definetely make again, maybe try some different extracts, too.
