Transformed Spinach Mushroom Quiche

My husband and I like more flavor, so I added teaspoons of finely chopped oregano and some dried Italian seasoning for a little more kick. I only had goat's cheese, but that tasted amazing. I followed the instructions and came out with a very pie that sliced easily and stayed together, but tasted very moist.

Eggless Eggnog

My husband and I loved this egg nog. I used just what I had on hand for milk, so it was 3 cups of skim and 1 1/2 cups of low fat buttermilk, but it came out nicely. I wish the original recipe had included the alcohol, though. I went ahead and tried 3/4 cup of rum and 1/4 cup of bourbon whiskey because I thought that was how much liquor the other recipes call for, but it was so strong next time I will use less rum.

Vegetarian Stuffed Red Bell Peppers

These were great, and I added a cup of minced cranberries, too. I think they really made the dish, especially since it's the Christmas season. Also, other reviewers had suggested goat's cheese, which I happened to have, so I added that, too. Magnifique! I served it with Indian-style naan bread and the moroccan salmon cakes also on allrecipes.

Moroccan Salmon Cakes with Garlic Mayonnaise

This was my first time making these so I followed the directions exactly, but when it was time to form the balls, they were way too wet so I boiled up some bulgher wheat, also with OJ, and added that. Then the balls formed perfectly, and the stuck together well when cooked. They were not too dry, either. I think mine needed more grain because I am in a humid climate and high altitude, so with baking I need about 1/2 c more flour than called for, etc. I formed them into the balls and refrigerated them for 4 hours, then fried them just before they were to be served.

Amazing Whole Wheat Pizza Crust

This pizza crust really was "amazing!" I added about 1/3 c flour because I am at a high altitude and cooked in 25 degrees cooler, but for a longer period of time. This will be my new go-to

Potato and Vegetable Frittata

This is a hit every time! I do substitute vegetable stock for the olive oil, though, and do half egg, then half egg whites (two egg whites per egg) to delicious results, and it's pretty enough that I've served it to guests several times for brunches and also dinners.

Fudge Brownies I

I substituted 1/2 c of honey for the sugar, 1/2 cocoa powder, 3/4 whole wheat flour and 1/4 white flour, then only 3 eggs, and these brownies still came out fantastic. Because of the honey I also lowered the temperature. The texture was perfect, so they were moist and chewy, but cut clean so not crumbly and made a nice presentation. Thanks!

Egg-White Crepes

I made the crepes fat free by substituting 1 tbsp plain nonfat yogurt for the tbsp of oil, and the results were fantastic. These are going in to my regular rotation!

Southern Living Magazine's King Cake

I made this recipe more healthy by using fat free yogurt, reduced fat margarine, half Splenda and half sugar, and half whole wheat baking flour, half white flour, and the results were fabulous. Instead of cinnamon/sugar, I filled the cake with a fat free cream cheese, banana, and pineapple puree.

Camp Cornbread

I made this recipe, but with some changes. Instead of adding sugar, I added 1/2 c of corn flour and two table spoons of butter. We thought the bread was sweet enough as it was, and I also used lowfat buttermilk instead of regular milk. My husband and I loved it!
