Soft Chocolate Cookies

These were good but I, of course, made a few tweaks. 1 cup is a boatload of butter/margarine so I used 1/2 cup of margarine and 1/2 of canola oil. I used a stone and a cookie sheet to bake them on. The cookies on the metal cookie sheet came out flat but still ok. The ones on the stone stayed fluffier. With the stone though, I took it out after 10 minutes and they were still doughy. It sat for 10 minutes waiting for the next batch and then I put them in again for 5 minutes. They turned out awesome. I also left out the chocolate chips and these are more than chocolaty enough.

Creamy Rice Pudding

This is a great creamy recipe. I used long grain rice and 1% milk. It just takes a little more cooking to get it a softer consistency. I also left out the raisins as my wife doesn't like them. I don't ever cut the sugar...it's a dessert for goodness sake. I added cinnamon and nutmeg to mine because it's not a rice pudding without them. My family loved it and as a bit of a dessert snob, I must say I haven't had one as creamy as this ever.

Chocolate Peanut Butter Bars IV

This is a great recipe but like the others I reduced the powdered sugar to only 2 cups and since I didn't want to use up the last of our graham crackers I used only 1.5 cups of graham cracker crumbs and 1 cup of wheat flour. I also only put in 3/4 cup of peanut butter. It still tasted delicious and nobody knew I put in the wheat flour!

Black Beans and Rice

Definitely a good base but I did double the garlic and added fresh chopped tomatoes. I also added 1/2 tsp of oregano and chopped a can of olives which I added at the end. Kids and wife loved it!

Spinach Casserole

This is yummy but I made some modifications. I didn't have the fried onions so I diced some an onion. I also added two cups cooked rice to make it a more full-bodied casserole to feed my 5 kids. I cooked it for 25 and it was fantastic. I had my 3 year-old crying because he couldn't have seconds...I offered him double dessert and he wanted the casserole more!

Skillet Apple Chicken

This came at the right time as we were low on groceries but had apples and chicken. I would definitely cut the garlic and black pepper back to half if not a little more. I use 3-4 chicken breasts and 4+ small apples or 3 of the big ones. It's been such a hit I make it on a regular basis now. Thanks!

Baked Chicken with Peaches

This is a great recipe. I used frozen pitted peaches and it turns out great. My only suggestion is to make sure you cut your chicken into smaller pieces or filet the thick ones to allow the flavor to be more encompassing.
