Grilled Cilantro Salmon

Positively THE best salmon recipe ever. I did not follow the recipe exactly and I did add jalepenos to the mix for a little bite. It was 12 degrees outside so I baked it at 425. I basted it with the honey marinde several times. Upon arriving for dinner that night, my dinner guest said that salmon was not one of his favorites - this recipe changed his mind and he loved it! I made a relish of peaches, cilantro, lime, jalepenos and a bit of balsamic vinegar. Served with roasted asparagus and risotto. OMG it was so good!

Amazing Italian Lemon Butter Chicken

Waaaayyyy too lemony! My children would not even eat it. I had such high hopes for this meal and it is sitting in the middle of the table largly untouched. I like everything else about it, so I will cut the lemon by 2/3 and see how that goes - I can always add more.

Creamy Vanilla Pudding

This recipe thickened up very well to a nice pudding recipe. I think it totally lacks flavor, though. If I am going to clog my arteries with cholesteral and sugar, it had better be really good and I just didn't think this one was worth it. I am going to try it again adding real vanilla bean to the first milk mixture and see if that helps. Sorry - I realize I am totally in the minority on this one!

Sweet and Spicy Pecans

Wonderful! I made these as belated Christmas gifts and also served at a Superbowl party (they go great with beer!). The only reason that I did not give it a 5 star was because they were a little soft from soaking them in the sugar...not sure how to solve this to get them to come out crunchy. Otherwise, I loved them!

Slow Cooker Pulled Pork

So so easy. Like some of the others, I changed it to a Boston Butt for a juicier piece of meat and less costly. You don't have to change a thing on this recipe. You "can" add to it if you want by rubbing it with garlic and bbq spices ahead of time

Cha Cha's White Chicken Chili

I am going to buck the 5 star trend here. I made this for the Superbowl; I cut the jalepenos by 1/2 based on other reviews. Even then, it was left mostly untouched by my guests. It was unpleasantly spicy. At the end of the game I had 15 bowls with one or two bites taken from it. What a waste! So "as written" I give it a one or two star rating. I would definately cut the cayenne, jalepenos and cumin by at least half, then add them back to taste later on. I would also use more cheese and serve w/cheese on top. This can definately be a 5 star recipe, but as written, it will not get 5 stars from me.

Aunt Gail's Oatmeal Lace Cookies

I would give this recipe a 5, but these really aren't "lace" cookies, as "lace" cookies spread very, very thin and even have holes or spaces in them like lace. Maybe they should be called oatmeal crisps. Mine look just like the ones in the photo. Regardless, these cooked up lovely-very light and crispy, very sweet. The taste was great. Mine turned out much too delicate to put in a tin of cookies mixed with others as they would just fall apart. I may try the suggestion of using 1/2 brown sugar to make them less crispy. These would be very nice served alone with coffee or tea after a luncheon.
