Balsamic Cole Slaw

I made this for myself and served it with chicken marinated in artichokes and garlic. The artichoke balanced the tang very nicely. Without the chicken/artichoke, I thought the vinegar in the slaw was too powerful, so go consider reducing the amount used. Admittedly, I wasn't precise with my measurements (I was hungry and I was tossing everything in the skillet ASAP), so I may have used too much vinegar. I used bagged coleslaw and matchstick carrots. I didn't have red cabbage or onion powder. I did add some red onion, which I would do again. This recipe is a great way to get in veggies and is perfect for Cycle 1 of the 17-Day Diet.

Pumpkin Chocolate Chip Muffins

I only used one cup of sugar and it was plenty sweet. For the flour, I used half whole wheat flour. I used 3 eggs instead of any egg substitute. Since I didn't think 1/4 cup oil was very much, especially with 2 1/2 cups flour, I didn't substitute any applesauce for it. I think I was generous on the cinnamon, and that was a good thing. My house smelled WONDERFUL when this was baking.

Green Salad with Cranberry Vinaigrette

This dressing is amazing! I used the fresh cranberry relish I bought (cranberries, apples, mandarin oranges, but I avoided using the oranges) for the cranberries. Super easy and totally gourmet. I served it over a salad of mixed baby greens, dried cranberries, goat cheese and candied pecans. Will definitely make again, and will be making more to use up my relish.

Maple Salmon

Yum! I had reduced sodium soy sauce on hand and it came out delicious! I probably only marinated the salmon for 15 min because it was a weeknight and I was hungry. Super easy - delicately sweet, nicely balanced with the salt/garlic.

Zucchini Yogurt Multigrain Muffins

"Great!" said my son. I made a chocolate version for my anti-veggie kids (almost 9 & 11). I added 1/3 cup unsweetened cocoa some chocolate chips. Since I was adding the chocolate chips, I dropped the honey down to 1/2 cup and also the sugar to 1/2 cup as indicated by the author in a post. I also reduced the cinnamon to 1 tsp due to the cocoa addition - I wanted the cinnamon to enhance the cocoa, not overpower it. For the yogurt, I used half plain and half fat free vanilla Greek yogurt just because I had both on hand and wanted to up the protein even more. Love that this recipe has good grains, veggies and protein. I didn't add nuts or raisins.

Fig and Olive Tapenade

Perfect for holiday entertaining! One guest who said he neither likes figs nor olives tried it and LOVED it. Any leftovers stay nicely, too. Don't skip the toasted walnuts, for they do add another wonderful dimension. I served it over cream cheese.
