Blackened Salmon Fillets
This was a big hit at my house. I dont eat fish but my husband loved it. Great seasoning. Plan to try it out with boneless chicken next time for me so I can see just how great the taste is.

Catherine's Spicy Chicken Soup
Great recipe. My husband and I liked it alot. I made it all in one pot except for cooking the onions and garlic in a skillet with the olive oil. I thought it was going to be very spicy with all the chili powder but it wasn't. I used 2 cans of roasted tomatoes with garlic and skipped the cans of whole tomaoes. I substituted cannelini beans for the chili beans listed. Also added a tablespoon of sugar to cut the acid of all the tomatoe ingredients. Think I will add a little cayenne pepper next time to kick it up a bit.

Baked Seafood Au Gratin
I agree with all, very expensive but quite good. Suggest serving it over steam brocolli or other vegetables. Next time I will make half the recipe and season more to taste. It was a little blander than we like.
