Gourmet Sweet Potato Classic

I made these for Thanksgiving this year & received tons of compliments. I added 1/2t coconut extract and 1T Rum to the sweet potatos. Then I added 1/2C of coconut to the topping mixture. Awsome recipe!

Pecan Cardamom Bar Cookies

These cookies need to be cut while they are still warm or you will have a crumbled mess. Also I read reviews that said the nuts kept falling off the cookie. So I whipped the egg white until soft peaks formed then brushed that onto the cookies base then sprinkled on the chopped pecans. This really helped keep the nuts on the cookies. Also I think cinnamon would taste better than cardamom in this cookie.

Kitchen Sink Meatloaf

Make the best meatloaf I've ever had. The only thing different that I did was replace half the steak sauce with more BBQ sauce. Also it's like chili the longer it sits in the refridge the better it tastes (not that it lasts that long).

Garden Fresh Tomato Soup

Better Than Cambell's! I did however add some crushed garlic cloves and a little brown sugar (to lower the acidity) - just my own tatste. I have made this several times and its always a crowd pleaser. Note if you don't have a food mill you can work it through a sive.

Chocolate Oat Squares

I found this recipe origanally in a Taste of Home cookbook belonging to my mother. The taste of home version called for only 3 cups of quick cooking oats and called to be baked in a 10x15" baking pan. With this change the cookies come out soft and chewy. Please note that these cookies are REALLY sweet.

Pebber Nodder (Danish Christmas Cookies)

I made these cookies for the first time and they were a hit! My Mom wanted me to bake some more for the church christmas concert. First I followed the one review that said to double the spices in the recipe and then add mace, cloves, ginger, and pepper. Also rather than cut out nugget pieces I used a cookie press since the dough was the perfect soft, slightly sticky consistancy. Beautiful and delicious - this is a KEEPER recipe.
