This was quite tasty, although I have made manicotti recipes that were far less work. I omitted the spinach -- my family isn't a fan, and I prefer fresh spinach in salads -- took the advice of others and used 1/2 lb. beef and 1/2 lb. sausage, and frankly, I could have used basil and parsley from my spice rack and probably not missed it. I made the white sauce as listed here, but when I tasted it, it was WAY too salty. I tossed that batch of white sauce and started over with about 60% less chicken boullion granules, and it was far better. I think I'll use the white sauce again on other receipes. My family pronounced the finished result delicious.
