Linguine with White Clam Sauce II

Excellent! This recipe claims to make 5 servings, but if this is accurate, they are 5 HUGE servings. I have to point out that while this recipe is certainly not low fat, it's about half of the fat of other Clam Linguine recipes....and tastes amazing.

Easy Chocolate Bundt Cake Glaze

I used this to top off the "Too Much Chocolate Cake" recipe also found on this site. It made more glaze than I really needed to top a bundt cake. It was really rich, and super delicious!

Too Much Chocolate Cake

Very easy, and very good! It actually made much more than my bundt cake pan could hold. I kept it in the fridge, and it got even better with time. I topped it with "Easy Chocolate Bundt Cake Glaze"....it was wonderful.

Slow Cooker Creamed Corn

This was certainly easy. I scaled it up to 20 servings, and it still didn'[t seem to make a lot. It got mixeed reviews, as I would expect "creamed corn" to receive. Some people just are not fans of that texture. They people who liked it, LOVED it. Personally, I didn't think it was exceptional. I DID, however, use lower-fat Neufchatel cream cheese, rather than regular. That maybe makes the difference? In other recipes, and/or eating it straight, I usually cannot tell much of a difference. Also, I followed other people's examples, and melted/mixed the creamy ingredients before putting them into the crock pot...I recommend doing this, because it is very thick and creamy.

Pumpkin Cookies with Penuche Frosting

Having grown up loving penuche frosting (it's awesome on chocolate cake), when I saw it on Pumpkin cookies, I HAD to try it. I made the recipe exactly as written. These cookies got great reviews from pretty much everybody. Even my toddler loved them. They are a little "cakey" in texture. I wanted to point out a positive- compared to other cookies, they are slightly lower in fat. As soon as the frosting starts to thicken, and you are not done frosting the cookies, pop it in the microwave for 10 seconds- it's soooo much easier to frost the cookies, and the results will look a lot smoother.
