This was certainly easy. I scaled it up to 20 servings, and it still didn'[t seem to make a lot. It got mixeed reviews, as I would expect "creamed corn" to receive. Some people just are not fans of that texture. They people who liked it, LOVED it. Personally, I didn't think it was exceptional. I DID, however, use lower-fat Neufchatel cream cheese, rather than regular. That maybe makes the difference? In other recipes, and/or eating it straight, I usually cannot tell much of a difference.
Also, I followed other people's examples, and melted/mixed the creamy ingredients before putting them into the crock pot...I recommend doing this, because it is very thick and creamy.
