Tomato Basil Soup I

This soup was such a surprise! I am a huge fan of tomato soup (especially with rice in it--not sure why that was such a childhood staple). I have had a few very flat-tasting homemade versions, but this was is great. I liked the way the spices tasted--which is often not the case when it isn't something super standard, like cumin in Mexican food. This is excellent served with grilled cheese or rice pilaf.

Peanut Butter Chip Chocolate Cookies

Mine turned out a bit crumbly, but I did use Egg Replacer. Either way, they are rich and fudgey.

Lentil Soup III

This was really delicious and hearty. I followed the directions exactly, and it had a good body, great flavor, and so easy. I will keep this on hand for a good way to use up lentils, and a great way to throw a soup together with virtually no chopping (just the onion).

Orange Cilantro Rice

This is a surprisingly easy and delicious dish. We used homemade orange juice, which doesn't get it a bright orange, but still a pleasing color.

Spinach Salad with Poppy Seed Dressing

The dressing is very good. I use it on salads and crepes. It keeps really well in the fridge. It is very thin.

Bread Pudding II

This is a very delicious recipe, and very simple. I like to pop it in the oven just after dinner when my in-laws visit so that by the time we're ready for dessert, this lovely creation is piping hot. I like to add a handful of chocolate chips, preferably Ghiardeli dark or semi-sweet. A little goes a long way. Also, once I did not use vanilla because we were out, and it made no difference that we could tell. Now I just skip it.
