World's Best Lasagna

This very much worth the effort. I made 3 layers with extra ingredients (doubled the cheeses), and used red wine instead of water. Company loved it, and I have leftovers, because I made so much of it.

Poached Orange Pears

Increased the recipe slightly for a large group we were making dessert for. It turned out awesome. Agree with others to reduce remaining liquid to a syrupy drizzle. Definitely use the cinnamon stick. It added such a nice subtle hint of flavor.

Slow Cooker Tipsy Chicken

An excellent recipe. I made a couple of changes, since I did not have all the ingredients on hand. I used Cream of Mushroom and Cheddar Cheeese soups. They made a delicious sauce for the chicken, and during the last hour I added 2 cups of broccoli to make it a complete meal, and served over pasta. I also used Kamalata olives, which added to the flavor. Definitely a keeper recipe.

Sweet and Sour Pepper Pork

This recipe is awesome. Added pineapple like other reviewers have recommended including the juice in place of the water. Also used apple cider vinegar, since I didn't have red on hand. Turned out awesome. Better than my local asian restaurant!

Really excellent, though I did double up on the pasta. Probably a middle ground is better, like 50% more pasta to make the dish sturdy but saucy.

Apple Pie II

This pie is awesomely good. I substituted pineapple juice and a little lemon for the apple juice, as I didn't have it on hand. Taste was yummy. I lowered the sugar to 2/3 cup total, of which half was brown sugar, added a teaspoon of vanilla, cinnammon, and a dash of nutmeg. And I used Gravenstein apples, as they offer a little tartness.

Oven Fried Chicken III

Wow, better than KFC original recipe, and a little better for you. Like other reviewers I cut the mayo in half, and added a little 1/2 & 1/2 to it. More than enough to coat 2 breasts and 4 thighs. I added lemon pepper rather than salt and pepper, and it came out just wonderful, with a hint of lemon in the mix.

Zucchini Parmigiana

This was easy AND delicious. A neighbor gave me one of those giant "what the heck do you do with it" zucchinis. I decided to try this recipe. I made the recipe larger as I had a big zucchini, and a lasagna pan to bake it in. I used cottage cheese rather than ricotta and it came out perfectly. A big hit with the family, and even gave some to the neighbor, if he promised not to share any more baseball bat sized vegetables. grins.

Creamy Rice Pudding

This recipe is soooo easy and can be made with either Sugar, brown sugar or Splenda, or Equal (if you add after it has cooled a bit). Followed the recommendations of others re the egg, and added a little cinnamon and nutmeg as well. A keeper, and a family pleaser. Made mine with 1% low fat milk, and it turned out nice and creamy. Oh, I also doubled the raisins, as I love em.

Blueberry Bread Pudding

I have had to use extra liquid (cream/half and half) on this recipe to keep the consistency more pudding like, and less like a loaf of blueberry bread. Excellent recipe though, and very tasty. I also use all of the egg.

Quick and Easy Green Chile Chicken Enchilada Casserole

Absolutely wonderful. Though I did make a few changes. Used a 12 ounce can of green enchilada sauce, and doubled the sour cream. Added a can of black beans, a can of sweet corn niblets, and a can of sliced olives. Baked for 90 minutes @ 325. Everyone loved it.
