Curried Apple and Leek Soup

Delicious, but we did make modifications which I note here only for my own reminder next time: only 1 fairly large apple, an onion instead of leeks, and about 2 1/2 cups of frozen hashbrowns. We didn't have yogurt to do on the top and didn't miss it.

Perfect Summer Fruit Salad

Fantastically fresh and simple. I left out the grapes and blueberries because there weren't any decent ones at the store. I did add cubed watermelon after the bananas and some raspberries on top to compensate. The syrup was light and dressed it up just enough to make it more than just a bowl of fruit but didn't weigh it down at all. I actually doubled the recipe for a large family party and served it layered in a "crystal" punch bowl. It was a beautiful addition to the table.

Quick Chicken Peanut Mole with Cilantro Rice

So so delicious! I didn't have any chili powder so I just used paprika. And instead of chicken I diced up some extra firm tofu and fried that in the oil until it was crispy and looked like croutons. Then I set that aside and did the mole and rice as listed (subbing paprika for chili powder and perhaps a bit generous on the PB) and stirred the tofu squares back in. Amazing!! Couldn't stop refilling my plate! Don't skip the rice. We used regular rice, not instant, and made 4 cups cooked. The sweet cool orange flavor is incredible with the rich chocolate/PB/spice.

Ratatouille Soup

Fantastic! Easy, delicious, and healthy. We used a smaller pearl-sized pasta but otherwise did exactly as listed and loved it. The next time we did a full cup of pasta to make it more stew-like; also excellent.

Fish Tacos

Fantastic as is or with some modifications. We used sour cream instead of yogurt because it's all we had. We also use a carrot/cabbage pre-cut coleslaw mix and toss it with a bit of the white sauce just before serving to help it all hold together (then add more because it's so amazingly good!)

Tres Leches Cake

We made this for my son's birthday today and it was the best I've ever had. We had Tres Leches in Guatemala, my friend from Honduras made it periodically, and from various places in the US and this was as good or better than anything else we've had. We followed the recipe almost exactly except did it in a 9x13 cakepan instead of springform. We also added about 1/4 cup powdered sugar to the whipped cream topping and topped with sliced strawberries. Thanks so much for this recipe, it's a keeper!

Butternut Squash Soup with Sage

Fantastic! We had this at our Christmas dinner and everyone ate it, even the preschooler and toddler. My husband didn't care for the sage butter, but since that's added to each bowl to taste he left it out in later bowls. He also hates squash in general but liked this. We served it again last week when we had dinner with friends and it was a huge hit. It's now on regular rotation. The only changes we made were because the pantry was low: boullion & water instead of broth; McIntosh apples and therefore slightly reduced sugar; and since I didn't have sage leaves I melted a bunch of butter in a skillet, put in a tablespoon of rubbed dry sage, simmered for a minute, and then strained the butter.
