Sweet Potato and Hazelnut Mashed Potatoes
I liked how creamy these potatoes became. However, I couldn't taste the nuts at all and only used 1/2 the cream and sourcream. You could probably get away with using lowfat on both those items and it wouldn't matter. The only problem is that they are very bland. I made them with the Beef Tenderloin/Port Shiitake reduction. The flavors went okay together, but the beef in that reduction was WAY TO SWEET!

Bacon and Balsamic Glazed Sugar Snap Peas
This tasted good but I agree with an earlier posted that you must drain a lot of the bacon fat. Also, I made the mistake of using a non-stick pan (the only pan I had left) and so I believe it made the snap peas even greasier. Good flavor with the balsamic and sugar.

Beef Tenderloin in a Port Shiitake Reduction
I am guessing I did something wrong because the port reduction was horrid. The port and rasberry sauce made it way to sweet and I could never figure out how to fix it. Also, someone suggested doubling it for 4 people. That was way too much meat for 4 people. Would not make again.
