Three Berry Pie

I made this recipe for my husband on valentines day. We both loved it! This was my first time making a homemade crust, and so the crust wasn't very pretty. I had a hard time getting the edges even, they were pretty jagged. Once cooked though, the pie itself tastes delicious! I followed the recipe exactly, and used all fresh berries. I saw some others added lemon juice for tartness, but mine was plenty tart with the fresh berries! I let it sit overnight before cutting and it was perfect. Not runny at all. I would probably add some sugar to the top crust next time to add a little sweetness to the crust. This was fabulous and I'll definitely make this again!

Blueberry Pie

I made this as a last minute surprise for my husband, and it was a HIT! I had never made a berry pie before, only pecan pie, so I was really surprised by how simple and easy it was! I used fresh blueberries and a pre-made crust because I was limited on time (probably would be better with a homemade crust), and followed the recipe to a T and it turned out fabulous. The only thing I would say is to wait for it to cool quite a bit before cutting into it, or it's pretty runny. I cut it while it was very warm, and it ran, but the next day it was perfect. I give this 5 stars and will definitely be making this again!

Bacon-Wrapped Chicken Stuffed with Spinach and Ricotta

I recently made this recipe, and it was good, but I felt like it was lacking a little something. I did make some minor changes. I used part skim ricotta cheese, and I didn't use the onion powder because I didn't have any on hand. Maybe this makes the difference, I'm not sure. Also, the thick cut bacon I used (Tyson brand) was really fatty and I didn't eat most of it because of that. I might make this again, but next time I'd probably try cooking it on the grill instead of baking. Overall it was good. But not to die for in my opinion.

Crawfish Linguine

I made this recipe because my husband and I had a lot of leftover crawfish from a crawfish boil the weekend before. It was SO easy to make and tasted DELICIOUS! I made it exactly according to the recipe. Next time I would probably cut the fat drastically, and try it with fat free half and half. But this got my husband's approval, which is not easy to do! This would also be great with shrimp or chicken too!

Slow Cooker Pulled Pork

This was SO easy and a healthy alternative to the fatter pulled pork version. I used regular IBC rootbeer but I'll use diet next time since I don't think the sugar content actually matters for the tenderness of the meat. The pork pulled apart perfectly. The only thing I would say is that it's definitely more dry than traditional pulled pork, but the barbeque sauce help that! I will definitely make this again!

Whole Wheat Blueberry Pancakes

This was a tasty, SUPER easy recipe for super healthy, diet friendly pancakes! They were so easy to make, and tasted great! The blueberries definitely give these another flavor dimension that is perfect. I did have to add a bit more milk, but I didn't measure it - I'd say less than 1/4 cup extra. Also, used Splenda and it worked great. I paired with sugar free syrup and turkey bacon for a healthy breakfast! Definitely will make these again!

Homestyle Turkey, the Michigander Way

I made this for my very first turkey on Thanksgiving this year. I was intimidated by making a turkey but this recipe was super easy and turned out fantastic. Very tender and juicy! I'll definitely use this again next year!

Corn Casserole

This recipe is SO good and super easy to make. The only thing is it takes MUCH longer than 45 minutes. The two times I've cooked it it's taken about twice that (and it was in two different ovens). Just be ware when you're preparing for guests, give plenty of time for this dish to cook!
