This is a great recipe...I followed the suggestion below for using a mixer...I only used 2tbsp of sugar and only added enough flour approx 5 1/2 cups to make the dough come off the bowl...I kneaded the dough down three times and let the dough rise for an hour...the last kneading I kneaded by hand with a little flour on the board and let rise the the pan for approx 45 min...everyone loved it...nice crispy crust with nice light bread inside
