Grilled Bacon Jalapeno Wraps

Reviewed: Jun. 17, 2013
These were a huge hit. I made them as stated in the recipe. I took the advise of others and baked them on low in the oven for about an hour on a rack. This crisped the bacon perfectly and the cheese did not melt out. Also take the advise and wear gloves while prepping these. I cleared all of the seeds and membranes and they still had a kick...which is what we like. I will make these again and again!

Unbelievable Chicken

Reviewed: Jun. 17, 2013
I made this as written except I substitued creamy Dijon mustard because that was all I had on hand. I doubled the recipe for 10 breasts. It was very yummy. We have tried a huge amount of different marinades at our house but this had a different taste to it that was very pleasant. It has a tangy/sweet taste. It was a huge hit at our party and I recieved several requests for the recipe.

Enchiladas

Reviewed: Feb. 6, 2013
I have never left a negative review before but this was just not good. It was dry and poorly flavored. I used corn tortillas and ground turkey. I'm not sure why as I followed directions but I will not make this again.

Pork Chops with Cranberry Balsamic Sauce

Reviewed: Nov. 20, 2012
I did not have cranberries so I did not add them. I also used broth instead of stock because that is what I had. I followed the recipe adding a touch of brown sugar. These were very good and easy. It is perfect for a quick supper. There was a lot of sauce so I might half it or serve with rice to soak up some of the yumminess. My young kids really liked this too. Next time I will thicken the sauce a bit at the end.I will definately make this again and again.

Glazed Corned Beef

Reviewed: Apr. 15, 2012
This was delicious. Once you try this you will never make it another way. The glaze was the perfect amount of sweet to the salty corn beef. I would slightly reduce the amount of catsup next time. This was a huge hit with grown ups and kids alike.

Flourless Peanut Butter Cookies

Reviewed: Mar. 5, 2012
These are very easy and delicious. I added a splash a vanilla as per other reviewers. I usually double or triple the recipe. These cookies get rave reviews. We have several family members who must not eat gluten so this recipe has become quite popular. I have shared it at least 5 times. Sometimes I drizzle the top with chocolate or add a candy kiss for variety but you don't need to. This recipe makess a very moist, chewy, rich cookie. I do recommend keeping the dough cold to help keep them from getting "greasy". Thanks for sharing this recipe!!!!!

Mini Cheesecakes

Reviewed: Mar. 5, 2012
I made these this weekend to take to a friends house for dessert. My husband is allergic to gluten so I used 9 crushed gluten free graham crackers, a bit of cinnamon, butter and sugar as suggested by another user. They were delicious. Our friends never would have guessed they were gluten/flour free and my husband did not feel his was missing out! I topped each with a fresh fanned out strawberry instead of pie filling. They were the perfect delicious dessert after a big meal. I will make these over and over again. Easy and delicous.

This was a good recipe. My husband loved it. I personally did not like the texture/tast from the instant mashed and did not need the additional cornstarch. It reheated wonderfully the next day.
