About this Cook
I'm a former caterer and LOVE making up my own recipes...putting a new twist on old ideas. I sell at a Farmers Market once a week and I love coming up with amazing finger foods. My current favorite recipe is Fresh Raspberry (from our garden) Chocolate Bars. It's a cross between Fudge and a Brownie! Also I make a wonderful chocolate zucchini cupcake with cinnamon icing! Those two things fly fast at the Market!

Anything Mexican, killer cakes, gourmet cookies and pastries.

My cooking triumphs
Our very FIRST catering job was for 500 people. From that we (my friend Maryann was my partner) and I were hired to do the S.D. Charger's office Christmas parties!
My cooking tragedies
I can't think of anything except for a catered party (at a hospital). We brought an extra turkey that we said we'd take home in the event it was too much. A woman saw it in the kitchen and got on the microphone and said, "there's leftover turkey in the kitchen!" In rushed a bunch of women and they started tearing up our turkey and bagging it! We were horrified!

Pumpkin Pancakes
If you are a big fan of puffy thick pancakes this is my recipe... 1-1/2 cups milk, 1-1/3 cups pumpkin puree, 2 eggs, 2 T. veg oil, 2 cups flour, 3 T brown sugar, 2 tsp. baking powder, 1 tsp. baking soda, 2 tsp. cinnamon, 1/2 tsp. nutmeg, pinch of cloves, 1/2 tsp. salt, 1/2 tsp. pumpkin spice bakery emulsion by Lorann Professional Kitchen (purchased it at HomeGoods). I actually put all the wet ingredients in a bowl and whisked them, then did the same with all the dry ingredients...then folded them together and gently whisked them with a metal whisk. Make sure you leave them on the griddle long enough to cook through since they are thicker. KILLER PANCAKES!!! Super pumpkin flavor.

Chocolate Ganache
This couldn't be easier! I added the rum, but you can add Bailey's or Amaretto too! I put it on an cinnamon apple cake and it was to die for.

Mint Buttercream Frosting With Dark Chocolate Glaze
Delicious! I added 2 T more butter and used Creme de Menthe flavoring and vanilla. The extra butter made it creamer. I topped it with Andes Creme de Menthe baking chips! Gorgeous! I also used a vanilla cake mix and dropped the Andes on top of each cupcake before baking.
