Baked French Fries II

oh my god, this recipe is AMAZING. I just made this for the first time and it was delicious. I did add a little extra basil (mostly on accident) but still came out perfect. i still can't believe how healthy they are!!!!!!

Corn Casserole III

This corn casserole recipe is AMAZING. Everywhere I've taken it potlucks, gatherings, etc) it has been raved about. I make a few substitutions: I used light sour cream, and I use only a little margarine (about 1/4 cup). It still comes out perfect. Thank you for this great recipe!

Iced Mocha Fusion Shake

Both the boyfriend and I LOVED this. Like someone else mentioned, I cut down sugar to 2 tablespoons and cut the vanilla to 3/4 teaspoons. He asked me to make this every day haha. I also used 1% milk on mine and 2% on his -- couldn't really tell the difference

Almond Strawberry Salad

I made this for Christmas this past year and it was a HIT. It was gone super fast, and everyone complimented me on it. This is the perfect salad if you're in the mood for something sweet and fresh. I doubled everything (except the honey) to make more servings. The only change that I made was that at the end I added a 'splash' of Raspberry Vinaigrette since I did not double the honey. Delicious and will definitely be making this again and again!!

Hominy and Cheese Casserole

Loved this recipe!!! I didn't have a can of gree chiles so I added a can of Roteldinced tomatoes and green chiles and that was delicious!! I also added a bit of chili powder and extra cheese (one cup, vs. 1/2 cup). Delicious! I will definitely be making this again.

Microwave Corn on the Cob

This was awesome! I followed the directions exactly (using Viva paper towels) and my corn came out delicious :) This is great for those times when I just want to eat some corn real quick but don't want to grill it or anything! Thanks for sharing!!

Easy Microwave Chilaquiles

This is delicious and easy to make! Perfect for students who live in dorms like myself. I did make some additions though. I added a bit of hot sauce to the enchilada sauce before . I also added a small can of diced tomatoes and green chiles, and once the food was served I squeezed a bit of lime over my serving. Overall, this is a delicious great meal that you can add different things to (corn, black beans, onion, cilantro, and on!) according to what you want/have. I will definitely be making this again!!!!

Easy Taco Rolls

I've made these twice and they are DELICOUS! I absolutely love this recipe, definitely a keeper. My boyfriend loved them, and we had lots of leftovers. Like the poster before me, I also used frozen corn instead of canned to reduce sodium. I also replaced the ground beef with ground turkey to reduce fat. I've made them twice: the first time with uncooked instant white rice and the next time with some mexican rice I'd made the day before and both were delicious. Next time I may try to throw in some black beans and maybe some chopped onion-- like another posted suggested, there really is so much that you can add/change to this and it'll probably still work! Thank you for posting this =]
