Turned out more pretty than I anticipated. Taste OK, not really like the top part (not very moist & fluffy like Angel cake), next time I will try yellow mix or other butter cake recipe & maybe strawberry preserve)

Mom's Rum Cake

Come out beautifully. I have trouble draining the glaze into the cake (I use toothpick to poke holes, maybe I need to make larger holes). I wonder if I can use other liquors besides rum to make it taste more alcoholic?

Classic Bran Muffins

The batter is so dense. I used applesauce instead of vegetable oil. It really sticks to the paper. Taste average. I will try other recipes.

Butter Cake

I doubled the amounts of everything. I used 4 instead of 2 eggs, an extra half cup of Spenda. I baked for 45 mins instead of 50 or 55. The cake turns out good, moist & buttery. It's not sweet enough for me. Next time, I would add 3 cups of Splenda for the recommended 2 cups of sugar.
