Oven-Fried Chicken

This is really a very easy, great way to make chicken. It stays moist on the inside and has a satisfying crunch on the outside. If you make it with legs and thighs it is super cheap as well.

Zippy Shepherd's Pie

This recipe is great tasting, but you definately need 1 1/2 to 2 lbs of potatoes to get enough to cover the top of your casserole dish.

Portuguese Kale Soup

Wow! Yuummy! Maybe my kale bunches were big, but I only needed 1 bunch. Otherwise used the recipe as is. Great flavor.

Elegant Fig Appetizers with Goat Cheese and Almonds

This got rave reviews at the dinner party I took it to. I used sliced almonds instead of whole because I thought they would be a better fit texture wise. I was able to take them quite a ways to the party in a thermal bag with a heated brick and then pour on the balsamic/honey glaze when I got there.
