Butternut Squash Bisque

I had a few hours this afternoon and decided to make this festive early fall dish with the abundance of butternut squash coming out of our garden. I baked the squash like everyone had suggested and am so glad that I did. It was much easier to scoop out and add in later. I didn't have vegetable stock on hand so ended up using chicken broth, 33 percent less sodium, and followed the recipe from there. I didn't add the cream because I like bisque without it. I also really enjoy nutmeg so I added a lot to my separate bowl. An overall great fall recipe. Thank you for sharing!

Sam's Famous Carrot Cake

Strawberry/Rhubarb Crumb Pie

We had this on a hot spring night with homemade whipped cream and coffee -- It was delicious and everyone asked for seconds! I did half the sugar and added almost double the fruit and I think that made it even better! Thanks for the great recipe.

Oh my goodness! I have made this at least 10 times in the past three months because my family and friends just rave about them! I will never try another chocolate chip cookie recipe -- This is a true winner!

Blueberry Buckle

I made this as a dessert for a picnic last night and everyone loved it. I served with vanilla bean ice cream and drizzled a sweet sauce over it from another reviewer (1 cup water, 1/2 c brown sugar, 1/2 tsp. vanilla, 1 tsp. butter and 1/4 cup cornstarch in a bit of water added when the other ingredients are boiling.) It was yummy. Just a note: I was a little worried how it would turn out when I was preparing it, since the batter was really sticky and didn't really "pour" into the cake pan -- Thought I accidentally added too much flour. Guess I was wrong because it turned out great! Thanks for sharing, Carol! :)

Classic Bran Muffins

I loved this recipe! Used applesauce in replacement of the oil, 1 cup nonfat plain Greek yogurt, 1/4 cup skim milk, 2 egg whites, added 1/4 cup flaxseed and did half white and wheat flour. Used dried cranberries and added some cloves, cinnamon and nutmeg...delicious! Next time, I'll replace the brown sugar with honey for a healthier alternative. Looking forward to trying with ripened bananas instead of the applesauce. Thanks for sharing this recipe! :)

Whole Wheat and Honey Pizza Dough

Made this tonight for dinner, but didn't have any wheat germ so I used ground flaxseed instead. Not sure if it made a difference since I've never made it with wheat germ. I cooked it for 15 mins at 350, put on toppings and then cooked again for another 10-15 mins and it turned out great. Crunchy on the bottom and outside and chewy on the outer crust. It was pretty good, but not amazing, thus the four stars.

Baked Coconut Shrimp

They came out pretty good, but the coconut didn't really stick as well as I thought it would. I did use the orange marmalade dipping sauce from one of the reviewers and everyone raved about it!

Almond-Crusted Tilapia

I followed the recipe, but instead of frying, I baked it for 10 minutes or so and it came out great! We even heated it up for leftovers the next day and it wasn't too dry. Thanks for sharing!

Simple Whole Roasted Chicken

This was AMAZING. I stuffed the chicken with an onion and sliced up potatoes, carrots and onions around the bottom of the pan with a bit of water. We had company over and I ended up forgetting to baste the chicken and thought I had totally ruined it when I forgot to take it out of the oven when the timer went off, but nope! It ended up being the juiciest chicken I've ever had. Everyone loved it. Thank you very much for sharing!

White Bean Chicken Chili

WOW. I made this for a quick family dinner the other night and served with shredded cheddar cheese, sour cream and corn chips since I didn't have any corn meal for cornbread. Everyone LOVED it and enjoyed the spicy kick it gave. I'm glad I doubled the recipe because we had lunch for a whole week and I was even able to freeze some for a quick dinner next month. Thank you VERY much for sharing!

Stuffed Peppers with Turkey and Vegetables

Delicious. It's really easy to add whatever kind of vegetable you want. Sometimes I'll even add leftover pasta sauce that's in the fridge and sprinkle with mozzarella cheese 10 minutes before the end of baking. Always an easy weeknight meal to fix. Also, great leftovers!
