Creamy Tomato-Basil Pasta with Chicken

This recipe is very tasty. I was surprised by how much flavor the chicken had. It was very moist, also. (Be sure to let it rest before slicing.) I sliced the chicken very thinly, and we had leftovers for chicken salad the next day. The sauce is very rich and flavorful. The only downside is that my tomatoes were too tart. Next time, I'll use halved cherry tomatoes on the vine. They are sweeter and have a better texture when cooked.

Baked Pork Chops I

Comfort food doesn't get much better than this. You may want to make extra gravy to serve over mashed potatoes. The pork is well-seasoned and tender, and the gravy was just right.

Mediterranean Chicken

This is a very good chicken dish, especially considering how easy it is. I cut the chicken breasts in half so they would cook more quickly and used a can of diced tomatoes instead of fresh. Other than that, I followed the directions exactly as written. The chicken was very tender and flavorful. I served it with hummus, pita bread, and spanakopita. Delicious!

Bacon-Balsamic Deviled Eggs

These are absolutely the best deviled eggs I've ever tasted. They are so different from the average recipe. The combination of balsamic vinegar, bacon, and sugar is delicious. I always add a bit more balsamic vinegar than called for to make that flavor stand out more, and also to make them a bit more tangy. It contrasts perfectly with the addition of sugar. Every time I take them to a function, I'm always asked for the recipe. You'll never want to make plain deviled eggs again.

Hamburger Steak with Onions and Gravy

I've made this recipe several times and it's always a hit. I divide the beef into 4 equal patties and double the gravy to serve over egg noodles or mashed potatoes. It's very flavorful and tender, and extremely easy to make.

Italian Torte

This recipe gets five starts for ease of preparation and simple taste. It's not too rich, and is a perfect, light-tasting dessert to accompany a rich Italian entree. Kids love it, too.

Sausage and Bow-Tie Pasta Florentine

This was a hit with my whole family. I used Newman's Own alfredo sauce and followed the recipe exactly. Next time, I'm going to try to find a way to reduce some of the fat.

Meatball Sandwich

Best Spanish Rice

I followed the directions exactly, and it turned out perfectly. It had a great texture and plenty of liquid for cooking. It doesn't taste like salsa and rice at all. I used a cilantro-chipotle salsa, and it was delicious. This is the easiest, tastiest Spanish rice recipe I've ever tried.

Frijoles a la Charra

This is an excellent recipe. It's exactly what I was looking for and turned out even better than expected. I altered the recipe just slightly. I didn't use a full can of beer. To me, it would have been too soupy. I added a bit more salt and used Canadian bacon instead of regular bacon. (I did this to cut down on fat.) It added great flavor, and I'll probably always use that instead. Finally, I added more jalapeno peppers than suggested because we really like a lot of heat. I soaked the beans overnight and cooked them on high for 1 hour and then all day on low (about 6 or 7 hours). I'm not sure they'd be done after only 4.

Cowboy Mashed Potatoes

I'm really surprised at how well my family loved this recipe. I couldn't imagine how it would taste, but it came together really well. I made it exactly as the recipe stated, except I used all red potatoes, because that's what I had. Next time I make it, I'll add another jalapeno and more cheese. I plan to use leftovers to make potato cakes.

Chicken Noodle Casserole

My family loves this casserole. I normally make a lot of spicy foods, so I was glad to find a recipe that doesn't contain any heat, but still has plenty of flavor. I followed the recipe with one exception: I did not have savory, so I used poultry seasoning instead. It was perfect! I'll add this to my regular menu rotation.

Zesty Slow Cooker Chicken Barbecue

Very good and tasty recipe. We ate it on rolls and then later made a pizza with it. Next time, I'll lessen the cooking time and reduce the amount of brown sugar. My chicken was a bit overcooked, but there was enough sauce that it wasn't dry. I'll make it again with a few changes.

Firehouse Machaca Taco Filling

This was very flavorful. The meat didn't get as tender as I expected, but I think I'll try cooking it in the slow cooker next time to remedy that. Also, depending on the salsa you use, you might need to add salt. I think the key is using a quality salsa verde. I used a local (Texas) fire-roasted salsa verde, and it gave it a great flavor. If you use a cheap salsa, the result will be terrible. Since you're not adding any other seasonings, it's key. The cilantro adds brightness, which we all enjoyed. Will make again.

Marinated Baked Pork Chops

I've made these twice now, and both times, they were a hit with the family. I made a few changes last time that made the original recipe even better. I reduced the oil by half and doubled the remaining marinade ingredients. I marinated the chops for a few hours in half of the mixture, and basted them with the other half during baking. At the end of the cooking time, I turned on the broiler to thicken the sauce. (Otherwise, it will slide off the chops.)
